During season 21|22, we blended a delicious new grape lambic, the PINOT MEUNIER TILQUIN SUR MARC 6.6 % alc. (available in 75cl), which was obtained from the fermentation of 100 g of Pinot Meunier pomace (pressed grapes) by liter of lambic.

Bottle split at the ‘rar’ date tasting in CBJ, can't recall where I acquired it, 29/02/2024.
Plummy berry reddish purple topped with an off white swirl.
Nose is tarte berry fruits, blackcurrant, funk, damp cloth, farmyard esters.
Taste comprises berry pips, blackcurrant yoghurt, lactic pinch, barnyard tones, funk, herb, vinous, balanced acidity.
Medium bodied, fine carbonation, semi drying close with a rising puckering kiss at the curtain call.
Top drawer lambic.

Newish grape lambic by Tilquin, differing from the regular Oude Pinot Meunier à l’Ancienne in that this one was made with Pinot Meunier grape pomace only – the solid remains that are left when the juice is pressed out. I wonder if Tilquin produced this pomace himself from the remains of the grapes after using them in the regular version… Initially medium thick, moussy, off-white, opening and quickly dissolving head, entirely gone after a while, over a hazy ruddy and cognac-tinged dark peach robe. Aroma of grape seeds and dry grape skins, lemon, old wood, dry earth, sour grapes still, very dry rosé wine, green tree leaves, red plum, forest floor, wild lingonberries, old books, barnyard. Crisp sour onset, very fruity with a predominant sour grape flavour flanked by hints of unripe plum, redcurrant and wild berries, lemony but not too sharply puckering; lively, cava-like effervescence, supple bready core under strongly drying grape pomace astringency and lactic and other acids, but remaining surprisingly juicy and fruity as well; grape skin and seed tannins reinforce the woody effects at the back too, but still this juiciness continues. Earthy and ‘Bretty’ effects join in further on (wet leather, dried mushroom, old leather – and effectively dried grape skins). Zingy, crisp but lively fruit lambic: I was a bit skeptical (even though I had great pomace lambics by Cantillon before), but it seems Pierre Tilquin managed to really squeeze the most fruitiness and juiciness possible out of this pomace. Quite elegant – but no match for the gracious beauty that is the regular Oude Pinot Meunier à l’Ancienne.

Pours unclear amber, scent is smokey, overripe grapes, funky, wood. Taste is sharp, earthy and funky, herbal, twigs, grape skins (not very tannic at all though). Chewy malty finish - which I like, Grape-wise, still not convinced about Tilquin's Pinot Meunier .

Brassigaume 2023. Hazy orange golden beer with a white lacing. Aroma of tart dry red grapes, barnyard, funk, vinegar. Taste of dry red fruits, tart berries, funky, fresh.

Premier essai de Tilquin avec du Marc - ce dernier reprend un peu le modèle des Meerts. Cependant, ce marc vient directement du Domain W à Saintes - non loin de la gueuzerie. A savoir que ici, ce n'est pas une version oude gueuze.
Léger pâle/ambre, col fin blanc-cassé.
Arôme est fruité avec l'apport de marc restant plutôt en retrait par rapport au caractère des lambics. Léger rétro de funk-cellier.
Palais est sec avec un caractère de soufre, moin sde rondeur qu'avec un usage frais du raisin. Côté sour demeure un peu plus marqué avec un relent plus 'acide'.

Bottle, 2021-2022. Released less than a week ago. Color: Slightly hazy reddish orange, very thin off-white head, Aroma: Funky, grapes, grapeskin,. Taste: A lot of horse blanket and farmyard Brett funk, very fruity grapeskin, grapemost, citrus, some grapefruit. A lot of tannins. Minerals. Oak wood. Hints of old hop. Moderate tart, light bitterness. Very well balanced, nice complexity. Medium body, below average carbonation. Dry mouthfeel. Nice grape Lambic.
