This beer is a blend of two different, slightly stronger takes on a traditional, mixed-culture Berliner Weisse that were both aged for nearly a year in our 80 year-old cypress wood lagering tanks at our Starkeller facility. The two different beers complemented each other with strong citrusy, lemon, and pineapple notes. To further amplify those flavors, the blended beers were then heavily dry-hopped with Citra and Denali hops before being hand-bottled and bottle-conditioned. The resulting beer is vibrantly acidic and bursting with tropical fruit aromas of pineapple and citrus.

Bottle pour at In de Wildeman, pours a clear bright golden with a small white head. Aroma brings out plenty of wild yeast and a touch of oak. Flavour is gentle, with lacto, wild yeast, and a touch of oak. Wild yeast, lacto and tart citrus. Complex and well-balanced. Very good.

Tap at DU..in 2023...5-6 years old? Bright sweet tart aroma. Sour IPA tone and flavor. Dried out, but still drinkable. Candy odd undertones. Juicy tangy hops flesh out the sour. OK.

Sampled from the bottle at GTMW 2018. Pours a clear earthy gold with a white head that dissipates to the edges. Aroma has flora, slightly earthy tropical fruits and a wheat backbone. Flavor has tart tropical fruits and tart lemon with a bit of bread and wheat backing.

I was not crazy about this. I like most in the serious but I had an off aroma of decaying plants. lightly tart. I wonder if it needs more time.
