We've hand-selected the best Jonagold apples from one of our favourite local Somerset orchards, fermented them with champagne yeast, and conditioned them for a number of months. The result is a nuanced expression of Ninkasi that will impress even the most discerning palate. Expect a greater depth of fruit from the Somerset apple juice, and subtle aromas of fresh apple and pear. The crisp finish will leave you ready for more!

Bottle shared at the craft beer junction bermondsey tasting. A hazed golden straw coloured pour with a fine white head. Aroma is light funk, plastic, fruity, loose wheat, grass grape. Flavour is composed of semi sweet, loose wheat, green apple, grass, pinch of lemon sour, spicy finish. Palate is crisp. Light sour, highish carbonation. Highish carbonation.

Craft Beer Junction bottleshare, thanks to Fergus. A light haze on this gold beer, small pale cream colour head. Smooth airy palate, semi dry, reasonable fine carbonation. Airy malts, a thin dry creamy sweetness. Boozy crystallised fruits, mild spice. Little brandy. Very mild tartness. Dry finish. Decent.

Bottle split at the CBJ share, thanks to the Fergus, 11/01/2024.
Moderately hazed golden orange with a just off white head that retains.
Nose is mellow fruit tang, herb, vinous, light funk, yeast esters.
Taste comprises tangy fruits, damp hay, barnyard nip, yeast esters, herb.
Medium bodied, fine carbonation, semi drying close with a tangy edge.
Okay sipper.

750ml bottle - Pours a lightly hazed golden colour with a large, slowly diminishing, frothy white head. Aroma is apple, vanilla, caramel, oak and a spicy yeastiness. Apple brandy, oak, brett and spicy flavours with a warming alcohol and woody spiciness in the finish.

75cl bottle @ monthly tasting, Chez Sophie, June 23. Misty pale straw yellow appearance. Good effervescence. Inviting apple must aroma, continuing to taste with additional vanilla and brett notes. Lovely sipper.

19th June 2023, Shrewsbury Monthly Beer Swap in Chez Sophie. Five guys enjoying life taking bollox. 75cl wax sealed bottle; BB 1st January 2029. The last bottle in our shared Wild 10th Birthday selection from the brewery. Light haze to the golden body, white head. Dry and bubbly (like Champagne), some apples in there too.

Keg pour at IMBC, Manchester. Pours light hazed gold with a white head. Aroma: apple, caramel, vanilla, oak. Taste: stewed apple, brandy apple vibes, light spicy, some brett. Medium+ body with spritzy carbonation.
