Wild Ale With Apricot & Wasp Yeast - 6% ABV. Fermented using an isolated pure yeast strain captured from an abandoned wasp nest. This unique yeast strain delivers a sweet honey aroma in a beer using all british ingredients. A beer inspired by Somerset Wild, our first wild yeast capture in 2013, and made possible by the developments in our lab over the following 10 years.

500ml bottle - Pours a clear orange-gold colour with a small frothy off-white head that quickly disappeared. The aroma is grainy and yeasty, some straw and light citrus notes. A light dry and light sour taste, grassy, hay, unripe fruit and yeasty flavours with a fruity bittersweet finish.

Bottle split at L6, thanks to Fergus, 22/03/23. Clear golden orange with a white cap that thins edgewards. Nose is lemon sherbet, yeast esters, grains, straw, herb. Taste comprises grass, lemon rind, herb, straw, yeast, light white peppery spice, hedgerow. Medium bodied, fine carbonation, semi drying close. It's okay if a touch simplistic.

Bottle shared in a conference room. Cheers to Fergus. Pours clear honey-gold with a creamy white head. Light sweet flavour, maybe some wheat, light bitter hay, citrus peel accents. Light bodied with fine to average carbonation. Finishes with more bitter citrus peel, crunchy pale grains. Alright.

Monthly Beer Share, Chez Sophie in Shrewsbury; 27th February 2023, five guys who love beer. 500ml bottle from a collective buy. White head, golden body. Wasp Yeast? I didn't detect any thing like that, more a kind of weak Apricot Jam taste and aroma.

375ml bottle @ monthly tasting, Chez Sophie, Feb 23. Misty golden orange appearance, modest off-white head. Fairly mild flavour profile, though does have a gentle sweetness that alludes to honey, almost no apricot which was disappointing as would've been welcome. Light creaminess.. ok.
