Winter Pepper est une bière d'hiver, de couleur ambrée, gourmande, nettement épicée avec trois variétés de poivre: poivre de Malabar, poivre de Phu Quoc et poivre du Gorille du Congo.

Bouteille 33cl, BB 04/2025, lot# 1249 achetée à la brasserie en fév 2024.
Une version pimentée plus hivernale de la Pepper Trip mais avec un trio de poivres qui change.
Couleur dorée/pâle, col fin crémeux blanc-cassé.
Arôme est plaisant malté, caramel, pâle, épicé -banane esters, agrumes discrets en rétro-nasal avec un effet de poivre concassé délicat tirant vers le boisé/terreux finement fumé/séché, épicé.
Palais sur une base assez classique franco-belge, petite note de cara pâle, pils, pointe de grillé voire de biscuit. L'apport des poivres se ressent avec une belle note de chaleur poivrée - cela reste aussi avec un côté agrumes, pomme caramel et un côté ester de banane.

Sovereign DC: pours light amber with white head. Plenty of pepper but without making you sneeze. Belgian yeast. Rounded sweetness with a definitive pepper note. The sweeter malty side is an interesting interplay with the many flavorful peppers.

Poured a light copper color with a small off-white head. Aroma was huge cracked pepper. Peppery, huge peppercorn. Very nice.

Draught @ Hoppy Craft, St Omer. Pours a deep hazed amber, off-white head. Confident spiced nose. Big peppery bite to taste.. very spicy, some prickly heat, off-set by soothing amber malt. Good stuff.

From a bottle at a RateBeer tasting. Pours a clear pale tea with an off white head. Mild pepper corns. Flavors are peppercorns with a bit of heat and sweetness.

Definitely a dose of white pepper, some florals, light bubblegum. Dry sweet finish. Nice stuff. Bottle thanks to Andy.

330 ml bottle. Pours a copper color with moderate head. Aromas of dry coarse pepper and bready malts. Flavors have both peppery and floral notes along with bread and a bit of fruit. The peppers brinng some spiciness. Interesting and quite nice.

330mL bottle, undated, drunk 7/21/24. Clear, medium-amber. Small, off-white head, quickly to ring. Delicate pepper, indeed. Almost a juicy richness to the pepper. Like a spicy, liquid concentrate. Very well-expressed and not overdone or astringent. Mineral, some plaster and light saison-like notes. Not heavy on the specialty malts, despite the color. Clean. No unwanted ester/phenol. Oh yeah...more of a bready, yet fruity and rich malty character with thorough pepper spice and intense pepper flavor throughout. Again, I get juicy, fruity notes with delicate pepper throughout. Clean, no unwanted phenol. Rich malt but amply attenuated. Hard to be unbiased here, since black pepper is one of my top 3 favorite edible substances, but this is just stunning and so well-balanced while pushing the envelope on spice without being too novel/overbearing.
