Bière collaborative combinant deux types de fermentation (haute et spontanée). Six mois de maturation en fermenteur inox puis 6 mois d'affinage en, fût de chêne ont conféré à cette bière des saveurs complexes, laissant s'exprimer à la fois la lavure Thiriez et le terroir des Champs Marmo.

Bouteille 33cl, BB 12/2030, lot#Mix1.
Dorée, col blanc fin.
Arôme est axé sur les bretts - belle note de barrique avec une douceur fruitée qui perce en retrait effet un peu bubble gum et abricot.
Palais est sur une belle note de barrique - aigreur fine avec une note de bretts latente assez délicat, touche abricot et pêche/groseille avec une certaine onctuosité et céréales. Le tout reste assez sex et poussiéreux avec une finalité très sèche et poussiéreuse.

Bottle shared at Brewver Belgian Winter Gathering. Clear pale yellow color, small white head. Aroma and flavor are lightly malts, yeast, quite bitter as well, distant fruity note, the bitter flavor from the white of the orange. A bit orval-ish in the flavor. Not bad at all! 8-7-8-8-7,5

Bottle at Belgian Beer Geeks Gathering. Hazy yellow golden with big white head. Light funk, spicy yeast, floral hops, dry oak, yoghurt, lemon balm. Over light sweet, medium bitter. Medium bodied with fizzy carbonation. Great, I really love this.

1/III/25 - 75cl bottle @ Belgian Beer Geek Gathering (2025 Winter/Spring edition), BB: XII/2030, lot: mix1 (2025-195) Thanks to Benzai for sharing the can!

Little cloudy pale yellowish beer, small creamy off-white head, unstable, non adhesive. Aroma: funky, saison, yeasty, herbal. MF: soft carbon, medium body. Taste: bitter, herbal, metallic touch, bitter, medicinal. Aftertaste: more bitterness, grains, herbal, a bit yeasty, hay, grassy hops, meh. Not a big fan.

330ml bottle, awaiting us in the fridge on arrival at our new apartment in Hazebrouck. Vibrant floral sweet mixed ferm aroma. Continues to taste, excellent wild expressions with bitter funk, sweet swirls and pleasant floral tangents. Very nicely done.

On tap at Kerelshof Cassel. Hazy pale gold colour lasting white head. Funky sour aroma. Definitely a wild yeast. Some dryness. Some good yellow grapefruit from the hops. Reminds me of dd Ranke Cuvee a mix of blond and wild. Very good. The grapefruit flavour is extremely good. Glad I have a toilet on site for the wild yeast tomorrow . Really good

Pale yellow colour with thin head. Aroma is funky and floral. Taste is floral and quite a bitter one. Something like lemon rind. Gentle tanginess.
