The Funk Dungeon mixed fermentation project evolved from our love of all things sour, bretted and barrel aged! Each small batch release is carefully selected and blended to create a complex, unique beer.

This stunning ale is a collaboration with our pals Will and James from the fantastic Balance Brewing & Blending. Working with a Manchester brewery meant that we just had to create our take on a bitter! This one uses Chevalier heritage grain, with crystal malt and a rigorous dry hop with aged Keyworth Early. The pleasant malt sweetness balanced beautifully with a bold, slightly funky hop character.

Pitched with each of our house blends of yeasts, a complex mix which has produced a delightfully refreshing and light finished beer.

Keg at The Old Shoe, Sheffield. Feb 2025. Pours amber with an orange tinge, beige foam. Aroma: minor caramel, wood, brett, citrus zest & rind. Taste: light sweet & bitter, mild tartness, biscuit, citrus, funk. Light-ish body with soft carbonation.

75cl bottle @ monthly tasting, Chez Sophie, May 24. Thanks Mark for this. Pours a dull golden amber, large off-white head. Bretty nose, which gives an indication of the direction the beer takes. Not much best bitter elements detectable, certainly little of the chevalier malt, the brett dominating the overall character. Tangy sweet, some sherbet. Dry bitter close.

Monday 27th May 2024, Shrewsbury Beer Share in Chez Sophie, five guys drinking beer and talking bollox. Cheers Mark for the 75cl bottle of this 'sour puss'. Off-white crown on an old gold coloured body. Not like any 'Best Bitter' I've had before thank goodness. Not a fan of Bret.

750ml bottle from Abbeydale. Gluten Free. Orangey amber brown colour, creamy foam head and aroma of citric rind, fruity, citrus, zesty. Taste is tart, sourish, malt, biscuit, with notes of ice cream, citrus, fruit, and funky bitterness. Medium bodied, soft carbonation, dry biscuity soured light bitter finish. Nicely drinkable.
