For Estonian Republics birthday in 2016 we came out with a special beer – ginger stout. This style is not easily found elsewhere. The beer name „Confucius“ derives from the ancient Chinese scholar, who spiced all his foods with ginger – that is said to ensure a long life.
Beer color is black with red flares with chocolaty foam layer. Aroma is a mixture of roasted malt, summer blueberries and slight cocoa flavours. Ginger aroma is noticeable, but still humble and mild.
There is a lightness to the beer, with roasted flavours on the dry-side and slight bitterness at first taste, but the palate will evolve into fruity juiceness in the end. A light smoky haze gives it a pleasant nuance – ginger being the finishing note.

Water, pale barley malts, aroma and bitter hops, beer yeast.

Pours a clear, dark gold. Sour nose, papaya, sour sop. Some mojo orange. Flavor is really sour orange with some minerality. Meh.

Can from Raynville Superstore. It pours clear orangey - copper with a thick, fluffy white head. The taste is sweet - sour, juicy, tart, tangy, melon, gooseberry, toffee apple, tangfastics, toffee, apple tango, twist of lime and lime cordial. The taste is crisp, dry, puckering, zingy, tangy, lemon - lime, nip of acidity, gooseberry, white grape, white wine, fizzy candy, sherbet, tangy, apple cider vinegar vibes, soor plooms and damp wood with a drying, vinous finish. Medium body and moderate prickly carbonation. Decent.

Bottle pour at the April DC Ratebeer tasting. Poured a dark orange color with a small white head. Aroma was initially off-putting. Flavor was lime zest, really juicy. Moderately sour.

Notes from FHF 2022 (Aug 06, 2022): Hazy gold with minimal white head. Mild tartness, just okay. Commentary: I may have been getting beer'd out at this point of the festival.
