Pszeniczny symbol Wrocławia – Schöps, warzony był już w XVI wieku, uznawany był za jedno z czołowych piw ówczesnej Europy. Historia tego piwa urywa się przeszło dwa wieki później, a do dnia dzisiejszego nie zachowała się żadna receptura. Wraz z międzynarodowym zespołem odtwarzamy ten styl, bazując przede wszystkim na opisach kronikarskich smaku tego piwa i wiedzy nt. dawnego piwowarstwa na terenach dolnego śląska. Piwo posiadało unikatowy, miodowo-muszkatołowy aromat, było oszczędnie chmielone, więc charakteryzowało się znaczną słodyczą, kontrowaną nieco przez kwaśność pochodzącą od bakterii kwasu mlekowego bytujących w porach dębowych beczek, w których fermentowało i leżakowało.
Today the forsaken recipe has been brought back thanks to the commitment of historians, brewmasters and brewers from world over. The aim of the project is to recreate a beer style that disappeared from Wrocław pubs for over 2 centuries.

Tap at Unorthodox. Sweet, slightly boozy, moderate caramel, but not overly so. Moderately smoky. Fruity, but plum not especially discernible. Full bodied, rather low carbonation. Not exceptional, but good one.

Bottle shared at THT October. Slight hazy darker golden with big off white head. Lots of herbs, mint, green leaves, spruce, juniper, flowery, soft caramel, honey, 🍯, bready. Just medium sweet and under medium bitter. Under medium bodied with quite some CO2.

Bottle 0.5l. Hazy, pale amber colored. AROMA- fermented, a bit sour, toffee, honey. FLAVOR- neutral to dry, lightly bitter, malt, spicy hops, old paper. Medium bodied.
