From a wicked salsa in Cuba, to a smoky cocktail lounge in 1980’s America, our journey through cocktails takes us to one of the oldest forms of cocktails, the sour. Despite sours having a long, rich history, our latest homage, the Amaretto sour, is a far more modern take. This ode to a classic, combines tart morello cherries with bittersweet marzipan notes, before a hefty dose of citrus cuts through to balance out this sweet and sour brew.

Keg draught at the Real Ale Classroom, Stoneygate, Leicester. Cherry red, clear with a big fluffy pinkish-white head. Cherries are big here, as well as the almond notes to give it that amaretto character. Initial sour taste followed by sweetness, big cherry notes. Short finish reveals a watery body but it's fairly heavily carbonated so there's enough to chew on here.

Can at home in Hackney - picked up from Sainsbury’s. Pours clear red with a modest, creamy pink head. Light-medium sweet flavour with nice fruit punch character, low acidity, mellow tangy cherry. Light bodied with massaging carbonation. Juicy berries to finish, Hawaiian Punch. Tasty, easygoing.
