‘Terf’ first saw the light of day in July 2020. This local wheat beer was brewed
by Brussels-based Brasserie de la Senne using old wheat varieties from the cereal collective of Brouwerij 3 Fonteinen from Beersel in Brabant. Part of the brew was immediately drawn onto small bottles and sold out immediately.
Another part of the brew matured further for three years in oak lambic barrels. In November 2023, this ‘matured’ Terf was lit with young 3 Fountains lambic, in a 55/45 ratio. This Wild Terf is the fruit of collaboration between brewers and farmer(s) around Pajot landraces and with a fair income for the farmer. Above all, it is an ode to the historical agricultural link between the Brabant countryside and Brussels.

Clean, lightly tart, a little lemon, melon, pale wood, low acidity, pleasant salinity, low bitterness. Very well balanced and drinkable.

Pours slightly unclear amberblonde. Small white head. Scent is full, thicker, maltier aroma than usual, way less sharp. Modest 3f funk, hidden wood. Taste is full, very raw, bready, coockie dough, wheat, medium bitterness, modest acidity, medium intense brett. Quite unique, feels oh so rustic. I'm not sure. I like it more than I can imagine it being good based on what I perceive. it just somehow, really works for me.

Poured from 375mL bottle (blend 105; season 22/23; bottled 03/11/2023; bb 26/10/2043). Chill hazed gold with small white head. Funk, light bitter citrus peel, feint hint of manure, a touch muted. Okay.

Didn't pop much, tan sort of colour, slight haze. Very low carbonation. It's got a solid earthiness, light 3F funk, brett, and a decent malt base for balance, and some lemony juiciness in the finish, along with good tannins.

Bottle @MBCC 2025, Red Session. Cloudy golden white head. Funky, fruity, leathery aroma. Sourish, tart and funky fruity flavour. Dry finish.

Copper with a white head. Tart fruity notes, medium acidic, wood, light must, sour grapes, lime. Medium bodied. Finish is long with lime, acidic, and must. Very nice with a bit reserved acidity.

0,375l bottle shared at home. Blend 105 22/23. yellow rather hazy color, small white head. smells Brett, funky, oak, grassy, walnuts, very nice smell. full body soft carbonation. tastes funky, citric, lime, some brett, earthy, light tannins. finishes lightly bitter and lightly sour with notes of lime, Brett and oak notes. Very nice one, great balance, very smooth

Orangeish golden colour with a small white head. Aroma is dry fruits, funk, some tart berries. Flavour is tart wood, some funk, brett and a bit herbal tones. Nice, but somehow feels like it lacks the normal 3f complexity a bit.
