Donker roodbruin bier met mooi stevig lichtbruin schuim. Smaak is warm en krachtig met vrij veel alcohol, wat koffie, chocolade, iets van kersen en zoethout. Heeft voor een reguliere stout een degelijk mondgevoel wat vaak niet aanwezig is.

Filip de Stout wordt gebrouwen door Brouwerij Rolling Hills uit Oudenaarde. Het is het verhaal van de broers Karel, Edward en Antoon Vandermeersch, Karel die reeds geïnteresseerd was op jonge leeftijd, roerde en brouwde wat in de potten in moeders keuken en bracht Edward op het idee om een thuisbrouwerij op te richten. Een omweg langs bierfirma Petre Devos zorgde voor het ambitieuze plan om een eigen brouwerij te bouwen. Deze kwam er in 2020 en werd gedoopt tot Brouwcompagnie Rolling Hills, een ode aan de heuvels van de Vlaamse Ardennen en op de manier waarop ze bier brouwen: een oude ziel met een frisse kijk.
FILIP DE STOUT is een helder donkerbruin bier dat veel bruinig schuim aanmaakt in een dikke laag met wat grovere bellen tussen. Het blijft sterk aan je glaswand kleven maar zakt gemakkelijk in elkaar tot er nog een fijn dun laagje overblijft. Op de bodem van de fles zie je nog wat gistdepot maar CO2 belletjes zie je niet wegens te donker.
HET AROMA:
Zoetig, wat mokka, beetje mout, hout en een alcoholtint.
DE SMAAK:
Zoet, zoethout, opgelegde kers, een alcoholtint
HET MONDGEVOEL:
Medium body en een volmondige textuur, een medium prikkelend koolzuurgas.
DE NASMAAK:
Zoethout, licht gebrand, hout, een alcoholtint, het zoetige en de opgelegde kersen vloeien wat uit.
HET VERDICT:
Een heel zachte zelfs wat gedempte stout, gaat wat richting quadruppel. Behalve de kersen en het zoete zijn alle andere tinten wat gedempt aanwezig. Hierdoor toch zeer drinkbaar.

Pours a dark brown. Medium small , off white, lightly browned head. Scent is chocolate, pure and natural though (not pastry style), somewhat malty (dark bread, mild but recognizable roast) Taste is bitter, chocolate, malty, creamy, somewhat coffee-with-milk vibes. Not boozy at all, drinking really well for its 9% . tastes more like a quad than a stout. Feels mildly raw, like a bit of yeaststress perhaps. Slick body, not really thick. Soft but rather high carbo. Mild dark fruity undertone. Yeah, marketed as a quad, this would have made much more sense...

Strong chocolate stout by the guys who started their enterprise by reviving the old Petre Devos brand in Oudenaarde, with a name referencing a Burgundian duke who married a Flemish countess and by doing so, kickstarted the Burgundian period in the history of the Low Countries. Enjoyed at café De Redding in the Brugse Poort quarter of Ghent - cheers Priscilla! Pale greyish beige, moussey to creamy, slowly opening, tiny-bubbled head on a black(ish) beer with ruddy hue. Aroma of 'Koetjesreep', caramel sauce, cola, Pim's cakes, nougat, liquorice candy, ground cashew nuts, bayleaf, dried orange peel, raisins, brandy. Cleanish, sweet onset, dried blueberries and figs, sharpish carb - even stingy, yet still slick, somewhat creamy mouthfeel; deeply toffeeish maltiness with a chocolatey edge, but less chocolatey than expected based on the concept. Biscuity and lightly sweet-nutty aspects as well, superseded by a slight dried citrus peel whiff at the back and a trace of coffeeish roastiness - but neither of those add strong bitterness, which in the end remains subordinate to the sweetness. Touches of liquorice and bayleaf here and there, before a brandy-like, warming alcohol glow rounds things off. Sweet and creamy stout, very slick and easily drinkable; perhaps not as rich and desserty as the average postmodern U.S.-inspired strong stout these days, but in itself a tasty and enjoyable, somewhat idiosyncratic beer. Quite liked it.

Pretty clear dark brown beer, huge irregular fizzy beige head, crackles down quickly, leaving a bit of lacing in the glass. Aroma: yeasty, very yeasty, lots of ripe to overripe banana, CO2, cough syrup, some dried fruits, soft roast, milk chocolate, pretty oxidized, impression. MF: lots of carbon, medium body. Taste: sweet sugary start, lots and lots of overripe banana, caramel, sugary, soft roast, a hint of chocolate. Aftertaste: bitter touch, a bit metallic, some cocoa powder, sugary, caramel, oxidised, dried fruits, cardboard, some alcohol, grains, a bit thin, not very convincing.
