In 2017, we set out to create a spontaneously fermented beer. Inoculated in two stainless steel vats overnight, the wort cooled down naturally. After two years of fermentation and maturation in oak wine barrels, 3 were carefully chosen, alongside a barrel of 18-month-old Coolship to make our first ever 100% Coolshipped beer!

This beer is naturally cooled in shallow stainless steel vats, borrowed from our neighbours at Westcombe Dairy. They were previously used for making their cheese curds and it’s very fitting given that our barrel library is in an ex-cheddar store. For a brewery like us that celebrates local terroir, a completely spontaneous beer was the dream

The fifth one of 22 beers for our 12th wedding anniversary. Norinfé's.
Bottle 0.75l. Almost clear, light orange colored. AROMA- apricot, berries, plums, funky, blue type cheese. FLAVOR- silky, slightly sweet, quite sour, lightly bitter, full of sour berries and apricots, strawberry, sea buckthorn, white flesh from baobab fruit, touch of wood, dark grapes. Medium to fuller bodied.
Very close to classic lambic. Great!

Lingering sourness of green apples, has a slightly sharp throat burning finish, still it’s ok, got this one from Trevor B. I believe

Bottle. Color: Clear orangish golden, white head. Fizzy. Aroma: Sweet and sour, fruity, funky, like a Geuze. Taste: Over moderate to medium tart, vinegar notes, fruity notes of white grape and white berries, some citrus. Moderate sweet. Light bitterness. Subtle funk. Quite a lot of wood and tannins. Dry mouthfeel. Pretty much carbonation for this style of beer. Refrehing but a bit unbalanced and too sour in my opinion. Still a nice Wild Beer.

Bottle from the brewery online shop. Pours murky yellow gold with a thin white head. Aromas are light acetic, sherbet. Taste is sour, sharp. Nice.

Bottle split at L6, big thanks to Danny Boyo, 22/08/19. Light haze on a golden orange pour with a well presented off white cap. Nose is tarte citric peel, dry rot, funk, wood must, barnyard rip, piss. Taste comprises sharp citric peel, apple skins, basement funk, yeast prickle, tarte fruit rinds, hay bale. Medium bodied, fine carbonation, semi drying close with a balanced acidic rise. Solid stuff.

Bottle shared in London - massive thanks to Danny. Pours lightly hazy golden orange with a frothy, pure white head. Solid lambic, good funk, nips of grass, lemon, pale wood. Medium bodied with massaging carbonation. Tart finish, moderate acidity, some pleasant grassy bitterness. Solid from top to bottom. Impressive.

Bottle shared at the columbus tasting 22/08/2019. Many thanks! A mostly clear golden orange coloured pour with a lasting fine white head. Aroma is white grape, musty white wine, vanilla, paint, spicy lacto. Flavour is composed of sharp and tangy, white grape, lacto, white grape, musty grape, citric acid. Paalte is semi sweet, spicy, moderate carboantion. Good.

Tap. Golden color. Oak, grapefruit, soft bretty notes in the aroma. Nice sour flavor. Grapes, grapefruit, vinous. Very tasty.

Level 6 Bottleshare. Thanks to Dan. Hazy gold beer, no real head. Thin palate, semi dry, decent fine carbonation. Tart orange and lemon, slightly acidic. Tangy minerals and wet wood. Ripe citric peel finish. Not bad but for me, hard to excited about.
