We've used three imported, specialty malts and a big sack (literally) of rye which give the distinctive red colour and spicy flavour. To compliment this grist big American hops are needed, so we turned to Citra, Chinook and Centennial; a stage for us to showcase some of our favourite ingredients. A craft beer that delivers more than just an explosion of hops.

Cask. Appearance is mostly amber with ruby tinges. A foamy half-finger head. Fresh, floral, hoppy aroma. A large amount of bitter hops in the taste, fruity hints, lasting finish, clinging in the mouth. Pretty good.

Cask at the brewery. Clear red amber colour with a lasting thin greyish loose head. Aroma is hedgerow berry, spicy cereal grains and slight solvent. Flavour is spicy hop, big solvent and hot alcohol and biting rough bitterness. Really rough round the edges. Some phenolics in the finish. Medium body and lowish cask carbonation. Not much to like about it.

500 ml bottle purchased from The Tiddly Pomme, Faversham. A clear, amber body with a nice, creamy off-white head. Not particular strong, but pleasant aroma of malt, toast and citric hops. Flavor is sweet, smooth malty, slightly toast and a good fruity bitterness. Fine and balanced body, aftertaste is sweet malty with a good bitterness. Very pleasant.

ChrisOs Early December Tasting. Courtesy of Harrisoni, Cheers Ian. Hazy amber beer, little white head. Smooth palate, smei dry. Nice spicy rye malt. Good bitter orange marmalade hops. Subtle red fruits. Really well joined up and so very very drinkable.

Handbottled@my birthdaybash@Chriso. Amber colour, not much head. Aroma is fruity, wooden, nectary, malty and earthy. Flavour is being rather similar in a nice balance. Also some quite berryish notes.

Handbottle @ chriso [ oh6gdx birthday bash tasting ].Clear medium to dark amber colour with a small to average, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate to heavy malty, toasted, caramel, moderate hoppy, citrus, grass, orange - citrus, fruity. Flavour is moderate to light heavy sweet and bitter with a long duration. Body is medium, texture is oily, carbonation is soft. [20111203] 7-3-7-3-15 Handbottle @ chriso [ chrisos festive get-together tasting ].Clear medium to dark amber colour with a small to average, frothy - fizzy, fair lacing, mostly to fully diminishing, off-white head. Aroma is moderate malty, caramel, toasted, rye, moderate to light heavy hoppy, grapefruit, orange - citrus, fruity. Flavour is moderate to heavy sweet and bitter with a long duration, dry, hoppy. Hand bottled from cask at oh6gdx’s birthday bash at chriso’s. Lightly hazy reddish brown. Light lychee aroma. Mid sweet with medium body and well rounded mouthfeel. Dough and grapefruit, mild growing bitterness. Nice!

Milk jug at Pat’s birthday chriso tasting, London. Pours clear red with a fine, bubbly head. Rye and pine in the nose, along with some toasty grain. Medium sweet flavor with light and grassy bitterness, rye, toasty sugars, and citrus. Medium bodied with fine carbonation. Lightly sticky finish, good hop bite, medium length bitterness, rye, grain, toast. Excellent beer. This stuff is legit good.

Cask handpull at The Foundry Canterbury. So this was getting towards bottom of the barrel but it was still good. Solid spicy rye on aroma good red fruits and then citra and chinook finish. Probably their best beer so far. Really tasty. Lovely hop
