Put simply, this cider is dry, balanced, and comes in at an incredibly sippable 7.1% ABV. Put less simply, the juice of the pressed, local apples were co-fermented with a Pét-nat yeast strain. Complicated? Yes. Easy to drink? Also yes.

Ingredients: Apple Varietals: Honeycrisp, Golden Delicious, Cortland, Bramley’s Seedling, Chisel Jersey, Golden Russet, Gold Rush, Nod Head, Northern Spy, Frostbite, Roxbury Russet, Calville Blanc, Liberty, Smokehouse, Orleans, Gold Rush
Yeast: Pét-nat
Spices/Other: Aged in Oak Barrels

Cellars draught, 9/19/24. Clear, waxy-honey-maize. Lactic, juicy, nicely attenuated nose. Funky without the excess acidity. Very approachable. Clean, dry, a bit in the thinner side, but juicy And clean with well-aged lactose c acid and gentle malic fruitiness.

On tap at the brewery, pours a clear gold with a ring of white head. Nose is a little wow, crisp clean apple, some candle and some white cake, green grape/champagne. The apple is so clear in the flavor and comes in a few forms, lightly sweet juice, crisp tart apple skins, green grapes, a little buttery. Really well made. Crazy drinkable and dry. Damn.

Tap @ Allagash. Pours a lightly misty yellow with a fresh spritz. Fresh apple orchard aroma. Super crisp palate, dry with crunchy apple skin and green apple notes, light oak influence with a naturally fermented feel. Pretty good.
