Process: Pale wheat beer spontaneously fermented and aged for 8 months in a single 400 litre French oak barrel. The beer was moved onto de-stoned Pond’s Seedling plums in tank. It was punched down daily until refermentation had calmed. The beer was on fruit for 2 months. We then blended back with another barrel containing our base wheat beer before packaging. The plums were purchased from Cam Valley Orchard which is situated very close to the Blendery.

Conditioning: Conditioned with small amount of priming sugar for natural carbonation in the bottle. Bottles laid to rest on their side. We condition our bottles for a minimum of 3 months. No yeast is added at this point, or at any point during the process.

Bottle from the stash, sourced from I've no idea! Pours light hazed gold with loose white foam. Aroma: sour, wheat, funk oak, mild plum. Taste: moderate sharp/acidic, dry on the palate. Medium body with spritzy carbonation.

Bottle shared with Sarah at the taproom opening. A hazed brushed gold orange coloured pour with a lasting white froth. Aroma is delicate fuzzy peach, plum, almond, light plastic, loose wheat, grains,. Flavour is composed of semi sweet plums, apricot, mineral, grass, loose wheat, mellow funk,. Palate is fine crisp, light tart, fine prickly carbonation. Very nice.

Bottle. Online shop. Light haze on a medium gold. Fine and lasting lacing white head. Looks well. Nose has wheat. Lactic funk. Trace of fruit. Taste is dry and lightly bitter. Fair hit of acidity. Mouthfeel is thin and acidic. Fine carbonation. Dry and light bitter finish. So much wanted this to be great.

75cl bottle @ monthly tasting, Chez Sophie, Jan 22. Thanks Mark for this. Pours a misty golden orange with small white head. Wheat presence seems to introduce a gentle saison like feel in the body and taste. Nice wild tang with soft funk and a distant fruitiness. Excellent depth and complexity, no element out of place. Fascinating beer and great introduction to this brewery.

Bottle shared at Beer Merchants Tap. Pours unclear gold with a lasting, creamy white head. Not bad, lightly sweet, a first there’s a touch of grassy plastic but it subsides, has a little tart plum, lemony bite, moderate acidity. Light to medium bodied with delicate carbonation. Tart finish, soft dryness, mellow tart plum, further citric tang, a little wood, melon. Nice depth. Very good overall, close to being really, really good.
