Blend of Oak Aged Lager and Saison
Sunrises is a collaboration with our lovely friends at Sante Adairius Rustic Ales. We brewed a lager and then experimented as we did as homebrewers with a precise matrix of Brettanomyces strains as we aged the beer in French Oak Barrels. After 12 months in oak, we wove in threads of Oude Fermier, Home, and Sunsets to push this lager / ale hybrid toward our individual Saison flavor profiles. Sunrises was bottle conditioned for 4 months with cultures from both breweries before sharing with you.

Wilde Bottleshare 16 juli 2025. Bleekgele kleur, iets troebel. Weinig wit schuim. Guert zuur, iets funky, fruitig. In de mond is ook hout waarneembaar. Smaak is zurig, met zelfs een vleugje zoet, bitter en zout (!). Lichte body.

On tap at Omnipollos Kyrka.Hazy yellow with medium white head. Nice funk and citrus, some stone fruit, juicy and complex enough.

Rated at The Side Project Cellar. Funky, tart and sourish with some oak, bretta, farmyardy floral notes, grapefruit and lemon. Refreshing.

Thanks ClarkVV on the 750 ml share. Flavor is brett, lemon rind, soft acid. Mild funk but mostly tart. Doesn’t beat you over the head with acid or sourness. Pretty good!

2023 750mL bottle drunk 10/19/24. Clear, bright marigold-honey-lemon. Small, white head quickly to spotty cover. Funky, dusty, cellary yeast and bugs with rich, honey-like malts. Lemony-tart. Round, pretty mellowed and funky. In the mouth there's honeycomb, light wax, cobwebby funk and bright, lemony acidity. Nice that it's not overly acidic but it is a bit light, kind of short in the finish. Lemon lingers, vanilla-laced sponge cake. Refreshing acidity, lots of Brett and moderate lactic.

Tap at Omnipollos Church. Hazy yellow with white head. Fresh, tart, citrus, some apricot, green grapes. Slightly acidic finish. Super fresh and quenchable.

Tulip at the roost pours a murky sunset yellow with a ring of white head. Light lacing. Nose is nice, lemon and apricot, neutral wood, some soggy bread and potpourri. So tight. Lemony and under ripe stone fruit. Green grapes and some briny character. Super tight. Medium high acid, medium bodied, bone dry with some salinity. Some funk lurking too.

Draft at Churchkey. Poured a hazy golden color with a small white head. Aroma was light lemon, tart. Light peach, lemon. Acidic, tart. Very pleasant. Quite a nice beer to sip.
