On 10th March 2018 we produced a bitter wort using barley, oat and rye malts similar to traditional saison brewing. This was fermented for eighteen months in five oak cider casks from Tom Oliver.

Four of these casks worked particularly well together; they were blended and dry-hopped with Tettnanger, Styrian Dragon and Ekuanot.

75cl @ SirAlex share, Oluf Bagers Gade. Pours hazy golden with a creamy head. Freshly baked bread, ripe red apples, juicy, floral and funky. Slightly tart and dry with a touch of perry and red apples lingering. Delicate and one of my favorite Mills so far. Thank you SirA.

Bottle, 750 ml, shared with Max, Miro B and kajser27. Hazy yellow, white head. Barnyard, some mold, funky, citric, apples, some bitterness, moderate acidity. Medium bodied.

Bottle split at L6, thanks to Frog, 16/01/20. Hazed orange with a well presented off white covering. Nose is funk, wood must, apple skins, tannins, light dry rot, lemon rind, dusty hoppage, yeast esters. Taste comprises grass, funk, wood must, apple skins, white grape, hay bale, damp straw, lemon rind. Medium bodied, fine carbonation, drying close. Solid.

Bottle shared in London - cheers to Fergus. Pours unclear gold with a frothy white head. Great stuff, moderate funk, some white wine vinegar. Medium bodied with fine carbonation. Tart finish, light acidity, lemon. Sound.

Bottle shared at Columbus. A light hazed golden orange coloured pour with a halo of white head. Aroma is sour grapw, funky saison, vinegar. Flavour is composed of sharp, funky grape, wet dog, hair, brett, lacto, spicy vinegar, pineapple. Palate is semi sweet, moderate carbonation, light tang. Good stuff.

Thanks to Fergus. Light haze on this gold beer, small pale cream colour head. Palate is light and fairly thin and dry, decent fine minerally carbonation. Tangy cider, some mild apple acid. Savoury apple. Touch of scrumpy. Minerally crisp finish. Slightly acid finish. Crisp and refreshing but a touch acid.

Bottle. Beer Ritz, Leeds. Soft haze on a medium gold. Fine, super dense, lasting, white head. Nose has loads of cheesy funk. Apple pomace. Mouldy apple. Rotten wood. Rye bread. Sweaty Dabinett. Sugary grain. Tons going on here. Taste is sweet and sour, with a big dose of oaky, tart apple bitterness. Light to medium body. Pretty clean, with a touch of acidity. Fine carbonation. Lingering oak bitterness to finish. Definitely more cider forward than the first batch, and super tasty, although it feels a little less drinkable for now.
