Today XO is a blend of barrels aged for three years or more. The worts for this blend were made in December 2017 and March 2018, using traditional turbid mash methods. The grists contained barley, oats, rye and wheat in varying proportions. An extra large quantity of aged hops were added to the boil to preserve the beer over the extended ageing in barrel. The worts were left in our coolship overnight to be inoculated with wild yeast and bacteria, before fermenting in small and large neutral oak barrels. The average beer age at bottling was 41 months. The resulting beer was conditioned in bottle for a further six months prior to release.

The beer is dry (yet relatively full bodied), with balancing bitterness and acidity.

Bottle split at the 'can people stop giving Kenny sour beers so they don't get shit rated' tasting, Mother Arch ii, thanks to Dave, 27/04/23. Moderately hazed orange with an off white cap that retains well. Nose is pissy green berries, funk, damp oak, hay bale, wood must. Taste comprises damp hay, gooseberries, funk, barnyard, mellow barrel, lemon nip, acidic bite, green berries, damp cloth, vinous. Medium bodied, fine carbonation, drying close with a balanced acidic spike. Solid kit.

Cheers Dan! A mild haze on this gold beer, small pale cream colour head. Palate is light and dry, good fine carbonation. Tart fruits, sharp, slight acid burn. Finishes dry and leaves a tart tingling fruity linger. Flirts with acid a bit too much for me.

Bottle shared at Kernel. It pours hazy yellow - gold with a small white head. The aroma is musty, crackery, malt, apple skin, pear, melon, grain, lemonade, sweet, dry oak and fizzy cola bottles. The taste is crisp, dry, snappy, fizzy candy, minerality, sherbet, tangfastics, lemon, lime, grapefruit, tannin, drying, woody, sweet - sour, juicy, puckering and bright with a dry, woody finish. Medium body and moderate, fizzy carbonation. Bright and funky.

Bottle shared in London - cheers to Dave. Pours mostly clear gold with a creamy white head. Light sweet flavour, good funk, lemony tang, salty bite. Medium bodied with fine, massaging carbonation. Clean finish, salty, lightly acidic, some pale wood, good funk. Great stuff.

Can shared at scopey homecoming tasting at kernel.any thanks to Wingman for this one. A light hazed brushed gold coloured pour with a halo of white head. Aroma is nice big lacto funk, brett, lemon rind, onion, green onion. Palate is crisp, tangy, citrus, fine carbonation. Flavour is composed of wet dog, lacto. Lemon rind, white wine, dry. Nice funk.

75cl Bottle @ 40th Birthday Bash / 20K Event. Pours amber copper with a white head. Green apple and wood. Not my prefered Mills.

Dolle 40 years and 20k bash. Cloudy golden with a lasting white head. Malty aroma with plenty of apple, and hints of oak and funk. Dry and slightly tart fruity flavour with apple and oak

Bottle. Mills online. Moderate haze on a pale gold. Pretty decent white foam. Nose has wet oak and lemon peel. Soft leathery brett. Bit of cheesy funk. Big gueuze character. Taste has tart and crisp bitterness. Gets a little dry. Fine and brisk carbonation. Lemony brett tartness to finish. Shit review. Great beer.
