Spectre Sister is a blend of two beers produced on the 17th & 20th July 2018.

An extra pale wort of maize, wheat and raw barley fermented in one ex-bourbon whiskey barrel and two freshly emptied cider barrels from Tom Oliver. The resulting beer is a bright and delicate Saison.

Bought this to trade when the Mills hype was red hot. What happened to that and who cares? Anyways, just a light haze on this gold beer, tidy white head. A bit of white wine nose. Palate is light and semi dry with decent fine carbonation. Smooth malts, mildly sweet, touch of creamy sweetness. Nice white wine and cider vibes here, modest barrel vanilla and a whisper of bourbon fruits, very mellow. Finishes smooth and semi dry. This would be a top notcher for me if it wasn't for the acetic burn on the finish. Just provided that awkward close to a fine tasting beer. The sour heads probably like it but most of em need a slap upside the head! 😁

Share with SirAlex. Coronashare #16. Birthday basher. Pours hazy golden with a fizzy head. Barnyard, funk, wood and a touch of lemon citrus and apple. A bit of fart which can be twirled away. Very dry and quite tasty!

750ml bottle at home. Pours lightly opaque orange golden with a frothy but quickly dissipating bubbly white head. Aroma: washed rind cheese, worn socks, brett funk, apple skins, oak. Thankfully the taste is more appealing. Light to moderate sour, juicy & sharp bitter cider apple, hints of lime & lemon. Medium body, soft carbonation, tart light funky finish

Bottle shared in London - big cheers to Fergus. Pours unclear yellow-gold with a small, foamy, pure white head. Wonderful balance, tart citrus, mellow woody dryness, subtle funk. Light to medium bodied with massaging carbonation. Great balance on the finish. Exceptional overall.

Bottle. Beer Ritz, Leeds. Soft haze on a pale gold. Fine white head is lasting and partially lacing. Nose has apple pomace. New leather. Crisp apple peel. Oaky tannins. Rotten lemon. Sharp brett. Taste is tart, juicy, and sharp apple bitter. Clean and juicy on the palate. Properly mouthwatering. Fine, brisk carbonation. Juicy and tart finish. Beautifully easy drinking.

Bottle shared on the train home to London from Manchester. Thanks to Wingman for this one. A pale yellow straw coloured pour with a fine white head. Aroma is little dungy, sharp green fruit, gooseberry, lime,. Flavour is composed of tangy, bready wheat, sour grape, funk, delicate, gooseberry, lime zest, straw. Palate is tart, straw, delicate, highish carbonation. Really good.

Bottle on the 1815 Manchester - Euston, big thanks to the Wingmane, 22/02/20. Hazed golden yellow with a decent white cap. Nose is base funk, dusty wood, light dry rot, green berry must, tannins. Taste comprises tarte citric zest, green berries, funk, dusty wood, balanced acidity, hedgerow, apple skins, grape must. Medium bodied, fine carbonation, drying close with a balanced acidic rise. Solid.
