100% spontaneous cofermentation of pears, apples and grains. No brett/bacteria/sour pitch added. 2 months of natural fermentation and acidification thanks to the microflora brought by the fresh fruits of local ancient varieties, 3 months of barrel ageing, 9 months of bottle conditioning. Beer wort is made from local organic barley malt, wheat from an evolving population and aged hops.

A clear golden beer with a white lacing. Aroma of sour apples, white grapes, brett. Taste of sour grapes, peach, mango, yeast, wood.

Bottle: Poured a mostly flat and slightly hazy yellow color ale. Aroma of funky ester with some light pear/apple notes and some tart notes. Taste is also a mix of pear and apple notes with some tart notes and funky barnyard notes. Body is full for style with good carbonation. Enjoyable sour but not sure fruit notes came out as much as I was expecting them to.

[9/5/2023] Draught at Open Baladin in Torino. 2021 version, 10.2%. Pretty clear deep golden-copper. Slightly candy-ish aroma, fruity, some apple, pear, caramel, sourish and sweet, vinous, a bit of alcohol.

Bottle, shared with Miro B. 2021 vintage. Hazy yellow with white head. Beautiful pear and apples combo, bit funky, very fruity, nice tartness, juicy. Alcohol is incredibly hidden. Beautiful.

Bottle. Color: Lightly hazy golden, thin white head. Aroma: Fruity apple, wet dog wild yeast funk, lightly tart. Taste: Fruity overripe tart apple, some pear, malty, bit grainy, wet dog / horseblanket wild yeast funk. Notes of oak wood. Apple and pear skin at the finish. Tannins. Light to moderate tart and sweet, lightly bitter, going towards moderate bitterness at the dry and astringent finish. Alcohol 10% is very well hidden. Well balanced, nice complexity. Very nice acquaintance with this new brewery for me.
