Voici Omniscience, dans laquelle nous avons intégré plusieurs ingrédients que nous aimons beaucoup pour en faire un dessert noix et chocolat. Nous n'avons pas lésiné sur la quantité de noix de macadam, noisettes, arachides et noix de coco avec une touche de vanille. Nous avons ajouté également un peu de café pour équilibrer le tout. Vous y trouverez des notes de brownie aux noix, de tiramisu, de crème glacée au chocolat sur une finale intense et riche.

On tap at their Gatineau taproom. Pours dark brown with a beige head. Macadamia, peanuts, vanilla, and coffee on the nose. Flavour has tons of nuttiness from the macadamia and peanuts, notes of vanilla, coconut, and a bit of roasted coffee. Rich and yummy, perhaps a bit brutal. Some time in a barrel and this would be excellent.

Lactose overdose with some roasty nutty notes and burnt coffee. Unbalanced.

Thick and sweet, lots of nuts (would have guessed hazelnuts), coconut, coffee, some vanilla, too much lactose. Would need barrel or base to counteract the milky sweetness, ends up cloying. Flavors are nice though. Nice.

Bottle: Poured a pitch-black color stout with a dark brown foamy head with some retention and some lacing notes. Aroma of chocolate notes with some strong floral coffee notes and vanilla notes. Taste is also a mix of chocolate malt notes with some strong floral dark roasted coffee notes and with some vanilla notes and light nutty flavours. Body is full with low carbonation with some discernible alcohol notes. Solid pastry stout with good balance overall.

A deep dark stout with a very thin brown head. In aroma, sweet chocolate malt with dark fruits, licorice, alcohol warmth, soy sauce, light coconut, very nice and rich. In mouth, a nice sweet fruity chocolate malt with dark fruits, licorice, alcohol warmth, maple syrup, vanilla, soy sauce, very nice. On tap at De la Gappe location.
