Poured from 500mL bottle (bottled 24/02/2023). Clear gold with quickly dissipating white head. Fair bit of oak, some funk, feint cheese, very mild ice wine note underlay. Slightly odd combo, but it's decent. Not a huge fan of Derniere Volonte, but this is my favourite of the variants thus far.
A hazed golden ale with a thin lacing white head. In aroma, sweet fruity malt with ground cherries, lactic acid, light cork, light buttery notes, pleasant. In mouth, a nice sweet fruity malt with ground cherries, lactic acid notes, Brett, very nice and smooth. Bottle from brewery.

Brown bottle, 500 ml, lot 001, purchased at Dieu du Ciel! - St-Jérôme on March 17, 2021, savoured on September 21, 2021; eye: golden with a coppery hue, clear, no effervescence, tiny half-ring of greyish head, no lacing; nose: acidity, fresh, white ice wine, slight musk; mouth: acidity, fresh, white ice wine, slight musk, finale in white ice wine with presence of acidity, medium-light body, average carbonation, lightly sweet, a little thin, slick texture; in summary: fine FRANÇAIS

500ml (thx, Alex M. for proxying and Max C. for bringing to BC!) @ 🏡. Appearance: a bit hazy pale golden with a white head. Aroma: funky, barrel, fermented grapes. Taste: along the same lines with some light hoopy bitterness and woody aftertaste. Overall: pretty good and refreshing.

Bottle: Poured a golden color ale with a large white foamy head with good retention and some lacing. Aroma of funky Brett notes with some sweet ice wine notes. Taste is a mix of dry Brett notes with some funky ester with some warming ice wine notes with light residual sugar notes. Taste is pretty full for style with good carbonation. Enjoyable but actually prefer the pinto noir version.
