The 2022 Proprietor’s Bourbon County Brand Stout is inspired by a love for cocktails and the vibrant food & drink culture that lives here in Chicago. Banana, coconut, pineapple, and lime all come together in this year's release. The natural sweetness of Bourbon County Brand Stout draws these flavors to the forefront for a truly tropical vibe.
Our brewers Jason Krasowski and Paul Cade sought to push the boundaries on what a bourbon barrel-aged stout could be. After a few nights out on the town, they found themselves both being drawn towards a similar palate. Eventually, their love for a jungle bird cocktail inspired them to riff on a version of their own. Balancing the bright flavors of the fruit with the dark warm layers added by the rich malt and toasted oak, these two friends crafted a stout that manages to transport you to warmer latitudes.
The 2022 Proprietor’s Bourbon County Brand Stout is inspired by a love for cocktails and the vibrant hospitality industry here in Chicago. This recipe was dreamed up after two of our brewers, Jason Krasowski and Paul Cade, spent a night out on the town trying some of the best cocktails the city has to offer. The result is a brewer’s take on a jungle bird cocktail that combines banana, coconut, lime, and a new ingredient for the Bourbon County Stout family – pineapple. The flavors are innovative and fresh, but also share common expressions found in both bourbon and our Original Bourbon County Stout but bring out flavors unlike any other Proprietor's before. Proprietor’s Stout will bring Chicagoans down to the tropics this Bourbon County Stout season, a welcome escape from the Chicago cold.

Roasty and heavy with coconut notes, loads of pineapple juice, hints of lime and banana, tropical fruit mix. Barrel notes are quite subtle, hints of vanilla and chocolate sauce. Pretty nice, a lot better than I expected.

Rating #40,000. 500mL bottle at Goose Island Brewhouse, pours black with almost no head. Nose is loaded with rich coconut, some pineapple, light banana, and gentle bourbon. Flavour is more integrated than the nose suggests, with huge bourbon barrels, banana, coconut and a touch of pineapple apple juice. Everything is integrated wonderfully. I was skeptical about that banana, but it works great. Lovely stuff.

From the BCS Media event, 2022: If the intent from the start was to make an “umbrella drink” style beer, they succeeded in that. The nose is actually kind of slight; first I caught some coconut, and then a smell of banana. Luckily the banana nose is not powerful. The taste brings in some more of the tropical fruit. Brewer Jason Kraswoski was there to mention blackstrap rum as an ingredient in the jungle bird, and I caught some of that. It is more of a cocktail than a bourbon beer. The bourbon is still there, but the main impression I get of that is coconut.

500ml bottle pours out black topped with a tan head. Nose is chocolate roast malts coconut bourbon barrel and pineapple notes. Taste is more of the nice sweet chocolate roast malts vanilla bourbon barrel plenty coconut and pineapple.

500 ml bottle. Huge thanks to TJ on this bottle. Aroma is bold coconut, chocolate, and perhaps a touch of lime. The flavor is coconut forward with the mildest hint of banana sweetness toward the back. Barrel character is low. Overall, this is still impressive and tasty!

Bottle best before Oct 5, 2024, drunk 1/2/23. Clear dark amber-mahogany, head fizzles away. Coconut! Lime is done nicely (aka I get very little lime). Soft, creamy, vanilla-like banana on the end with little/no pineapple. Not all that much Bourbon with low alcohol. Some bourbon and spice pick up as it breathes. Oddly balanced in the mouth with lots of roast, moderately fruity coconut and tasteful bourbon. Wow this thing gets it done against all odds. Insanely restrained adjuncts. Coconut and banana are prominent but not overdone with good attenuation and a pleasing but not too syrupy texture. Not boozey. This will be insanely good in six months.

Bottle split 3 ways aroma is pineapple, coconut, hint of lime. Taste is really nice, good integration of flavors. Banana is in the finish adding a slight sweetness. This is quite good.
