This beer was created using 2021 and 2022 harvest raw spelt grown organically by Keith Kisler and family in the Chimacum Valley on the Olympic Peninsula. In late 2021 we brewed saison with the spelt and a variety of organic barley. The beer fermented and further aged in barrel for over a year before blending with an equal portion of young beer brewed with 2022 spelt.

This beer is an attempt to showcase the work done at Chimacum Valley Grainery.
Refermented to condition in the bottle with the residual sugar from the young beer.

A hazed milky yellow saison with a thin lacing white head. In aroma, sweet fruity malt with light lactic notes, light peaches, light Epsom salts, very nice. In mouth, a nice fruity malt with light Epsom salts, light herbal character, pleasant and smooth.

Bottle shared at CBJ - cheers! Pours mostly clear pale yellow with a slight, creamy white head. Light sweet flavour with mellow fu k, soft lemony tang, light salinity, a little white wine. Light bodied with massaging carbonation. Clean finish. Solid.

750mL bottle, 21/22 season, drunk at SP line share, 10th anniversary, 9/29/23. Light, pale blonde-golden. Moderate, white head, good retention. Soft, well-aged saison notes with black pepper, a pinch of lactic acidity. Far more traditional than expected. Honey and biscuit-like malts, lots of stone fruit ester. Clean. Soft, expansive carbonation with a supple, well attenuated texture. Juicy in the finish with mellow lactic and mild Brett acidity. Easygoing stone fruit character. Joined by classic Dupont-like notes in the finish. Clean.
