A blend of Farmstead ales aged in wine and port barrels.
This ongoing collection provides us with a perpetually optimistic opportunity whereby we might purposefully assemble threads to weave an elegant sensory tapestry, one where the sum is more consequential than its components.
As has been our custom, each fourth entry has been and continues to arrive as a dark Farmstead® ale.
This blend is composed of Port barrel-aged Phenomenology of Spirit and wine barrel-aged Edith, each of which spent more than a year in oak slumber; the varied barrel lineage enjoyed by each of these elements included Damon, Flora Cuvee, Sue, and Sankt, amongst others. Following assembly, it was dry-hopped with personally selected Motueka hops from Freestyle Hops, our agricultural partners in Upper Moutere, New Zealand.

Bottled, huge thanks Brandt for sharing with Adam V, Zhenya and me! Misty brown body, no head. Vaguely sourish aroma, caramelly, nutty, vanilla, berries. Lean, dry, taste, blackberry-driven, smooth, low caramel, but so dried out... Huuuh... Fun but, what is it?!?

Bottle at home in NH. Pours clear, cola brown with a creamy, beige topping. Lightly sweet with mellow funk, a little lemony tang, modest acidity, nips of earth, leather, berries. Light bodied with average carbonation. Balanced finish, super clean, mild dryness. Outstanding.

Bottle thanks to William. Pours a dark brown with small beige head that lasts. The aroma is dark fruit, funk, oak. Slick body, mineral, funk, wood, dry finish, very nice.

375mL bottled Jan 12, 2021, drunk Jul 20, 2023. Cheers to 200 Hill Farmstead ratings! Dark, clear. Dark beige head slowly to cover. Somewhat persistent. Cherries, cacao, walnuts, hazelnuts, mellow brett and even mellower lactic acidity. This one seems really nicely balanced and homogenized, but then, these bottles seem to be bottle conditioning forever now, so that helps. This is really sublime with the dark malts and they don't jump out at you or dominate in the least. Almost some honey-like base malt character on the finish. Soft, very tart, with moderate lactic acidity and roast combining to not quite cause a palate cringe. Light brett, more nutty tones and good malt depth with hints of vanilla, cherry and almost a madeira or port-like character lingering. Quite carbonated, but naturally-so, so it's fine. That finish is killer - cherry, date, fortified wine, mellow lactic acidity. Shaun's getting good at this...;)
