We brewed this Imperial Coffee Stout in collaboration with our new friends at Cat & Cloud Coffee just up the road in Santa Cruz. Having tasted through their specific blends and singular bean roasts we settled on Ethiopia Kercha Natural. These beans, sourced from a collection of small farms, are processed the natural way- or dried with the entire coffee cherry intact- a time and labor intensive process that yields a unique flavor profile. In this case, providing a prismatic array of dried pome fruit and ripe berry flavors that blooms in the glass and enlivens the dark cacao and caramel notes of our base stout. Each sip is a delicious reminder that there is color and light to be found in the darkness.

Can. Pours opaque black small tan head, good lacing aroma is espresso, cocoa, roast, earth. Flavor is medium sweet, light plus bitter. Full body.

Can. Blackish beer with a brown head. Caramel and light roast aroma. Coffee and chocolate flavor with caramel and light roast. Medium bodied. Chocolate and coffee linger with dark fruit and light roast.

Poured from a 16 oz can dated January 04, 2024. Aroma is roast forward with nice coffee notes and roasted malt. Lighter dark chocolate notes and some toasted bread as well. Light alcohol notes. Hints of ash. Pours dark brown, but not quite black with a medium sized, thick, mocha head that recedes quickly to the edges where it lingers. Flavor is slightly sweet with moderately strong notes of roasted malts, coffee and dark chocolate. Lighter notes of toasted bread, caramel and hints of ash. Medium low bitterness and light alcohol notes. Mouthfeel is medium full bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid coffee stout with lots of coffee and roast flavors. Good chocolate and other complimentary malt flavors as well. Alcohol is fairly well hidden and not too bitter.
