As years passed and our oak aged beer became more robust, we discovered many unique, interesting, single barrels deserving of a special release. Barn Owl was created as a response to these lone wolves, and has grown into a diverse, ongoing series that reflects the growing diversity of our barrel program. The name is a nod to the wise and exacting animal that keeps watch over the farmhouse (er..industrial warehouse), and the one-off creations are released sporadically throughout the year, just as soon as we deem the barrels ripe for the picking.

Pours slightly hazy gold with a fading white head.
Nose shows heavy apricot, funk, elderflower, marzipan.
Flavours include more apricot, a bit of coconut from the wood, elderflower, funk, and a refreshing acidity.

Bottle split at the Digital Shadow Tasting, thanks to Fergus, 13/07/22. Lightly hazed golden yellow with a white cap that dissipates to a swirl. Nose is light funk, apricot, damp cloth, lemon rind, straw. Taste comprises hay bale, musty apricot, tannins, herb, hedgerow, lemon rind, light funk. Medium bodied, fine carbonation, drying close with a balanced light acidic tang. Decent.

Creamy white good mostly lasting head. Yellow colour. Light malty and moderate hoppy nice acetic aroma. Moderate bitter flavor. Long moderate bitter sour finish. Creamy palate.

Bottle shared in Canary Wharf. Cheers to Fergus. Unclear yellow, creamy white head. Quite tasty, tart citrus, soft funk, lemon candies. Light bodied with delicate carbonation. Quenching finish. Tasty.

Bottle shared at the sweltering Columbus tasting. 13/07/2022. From CW online. A translucent golden yellow coloured pour with a fine white froth. Aroma is big farmyard, funk , tangy pineapple, pithy lemon, shurbet, canned pinapple. Flavour is composed of tart prickly citrus, shurbet, horsey funk. pineapple. Palate is crisp, airy carbonation, prickly. Nice stuff.

Level 6 tasting. Cheers! Hazy yellowish gold with a tidy pale cream colour head. Airy palate, mildly dry, decent fine minerally carbonation. Soft malts, a light creamy sweetness. Nice light tartness, mildly lemon. Modest apricot. Refreshing and never acid. One day all sours will be made this way...

Bellwoods 22, b Cloudy pale blond colour. Funky aroma, but also fruity; it's sour, aggressive, a bit funky, and chalky, with some residual sweetness; hints of citrus peel.

A pour at I hope not a super spreader event Weathered. Appearance: cloudy blonde with a white head. Aroma: nuce funk, some stone fruits and pharmacy notes, oak. Taste: along the same lines, with accent on pharma. Overall: nothing special.

(500ml bottle c/o Herbalist, thanks!) Pours basically clear deep gold with a huge pile of fine white froth and heavy lace, very Belgian in appearance. Aroma of fresh, very ripe and sweet apricots with a bit of apricot preserve and nice fuzzy skin, some sweetish yellow/orange citrus backing, soft leather and dry hay funk and clean oak. Flavour is sweetish and fruit-forward, lots of juicy ripe apricot all over the flavour with some lightly spicy black pepper phenolics, some tartness in the middle of the sip but as much apricot as lacto, funk quite light, wood is moderate and builds into the finish to dry things out along with apricot skin. Medium body, very nice fine creamy carbonation that makes it feel fuller. Not exceptionally complex but not too sour unlike some recent Bellwoods wilds, nice clear apricot expression.
