Barrels are an ingredient. Every barrel residing in the Goose Island Barrel House in Chicago has its own unique story to tell. Each and every one of them offers its own expression, voice and color that shapes and develops the nuances of the beers resting within them. Our brewers intentionally craft a spectrum of beer styles that amplify the vibrant kaleidoscope found Inside every barrel.
A blend of Barleywine, Oatmeal Stout & Imperial Stout
Our Kaleidoscope Cuvée is a mesmerizing display of a multitude of barrels and is a testament to our legacy in brewing, blending and barrel aging. As pioneers of bourbon barrel-aged stout, we continue to discover new ways to push the boundaries of our art by thinking beyond bourbon barrels. With notes of roasted praline, dried fig and toasted oak, this cuvée is intricate, deeply captivating and a beautiful exploration through a myriad of barrel-aged ales.
Aged 18-36 months in the following barrels:
41% bourbon
30% rum
11% cognac
11% port wine
7% maple syrup

Keg at the taproom. Pours black, nose is chocolate, meaty, coconut, vanilla, taste is chocolate, liquorice, dark fruits, vanilla, coconut. 8/9/9/8/8

Tap at BPBW 2025... Dark brown body, blackish, off-white head. Heavy barrel in the aroma - chocolate, carob, vanilla and bourbon. The taste, however, was rougher than I expected - heavy alcohol, bourbon, lovely chocolate and carob notes, but the alcohol was a bit much, the Mon Chéri was subtler. Also, the obligatory "fuck ABI".

Full bottle. Pours back with a fizzy head that's quickly gone. Nose is mainly of bourbon barrel, with a little tartness, kind of like sour cherry. I catch a bit of smoke before the first sip. I can easily spot both the impy stout and the barley wine. Bourbon taste comes up, and some of the rum. Slight bit of stickiness on the lips.
Taster from cask at FoBAB, 11/23/24. Another black beer with a thin ring of foam as always. The smell does have some bourbon to it. Beautiful light scotch taste with no harshness. And plenty of bourbon nose. Sits down very nicely. A very less astringent version of their barrel-aged stouts. 10-9-9-10-9

Black with a large creamy tan head that left decent lacing. Toasty and sweet with cocoa, red, wine, nut and chicory. Very long finish. Full bodied and creamy.

Rated at Brewskival 2024 - The Grande Finale. Roasty, sweetish and stingy woody with some oak, bourbon, cognac, syrup and sherry, hints of prunes, raisins and chocolate sauce. Quite heavy and intense slow sipper.

Bottle 18/05/2024 Malmö May 2024 tasting at Palace Hall - sweet dark roasted malty with opulent chocolate, some toffee fudge and caramel sweetness in play, full bodied, maple and bourbon interlaced sweet lingering malty finish.
