A full bodied winter ale, with hints of Nectarine Peel, Clove and a touch of coriander, all with a warming finish. The beer is brewed with honey, molasses, and golden syrup in the mash, then a collection of toasted spices including Vanilla, Clove, Cardamom, Nutmeg and Cinnamon were thrown in to the boil to give a truly festive aroma.

Cask@The George, Strand, London - dark brown to black with a beige head. Sweet toasted malty with notes of dried fruit, caramel and toffee, medium body, spiced sweet malty finish.

Cask (gravity) @ 32th Pigs Ear Beer and Cider Festival 2015, at The Round Chapel in Hackney, London, England. [ As Signature Brew Wild Winter ].Clear dark brown colour with a average, frothy - fizzy and open, good lacing, mostly lasting to diminishing, off-white head. Aroma is moderate malty, dark malt, spicy, chocolate. Flavor is moderate to heavy sweet and bitter with a long duration, spicy, roasted, chocolate, sweet malt, sugary. Body is medium, texture is oily to watery, carbonation is soft to flat. [20151203] 7-3-7-3-13

Cask @ Soup Kitchen, Manchester. Dark but clear ruby red ale with a creamy head. Fairly strong but still crisp and palatable, with a small smoothness. Has a cordial berry-sweetness in its nose, although its complex combination of spices combines for a drier, less sweet taste, but one with character. There seems to be a dark berry-fruit sweetness here too. The smoked influence is low.

Pigs Ear Day 4. Cask. Clear deep amber beer, a few pale tan bubbles. Smooth semi sweet malts, caramel - toffee. Smooth cinnamon. Tangy strong ripe fruits. Touch of maple. Light semi dry finish. Fully flavoured Christmas nonsense.

Cask at Pigs Ear 2015 - London. Pours clear copper with a slight, white foam head. Wintery spices in the aroma, some gingerbread, cinnamon, bread, berries. Medium sweet flavour with notes of fruitcake, melon, orange, more spices. Medium bodied with fine carbonation; good condition. Sweet finish, fruity, with some bready malts, plum, nips of toffee, more gingerbread. A very nice holiday ale. Good spice integration.

Gravity dispense at Pigs Ear ’15, 04/12/15. Rich chestnut brown with a decent beige covering. Nose is clove, spice, mince meat, banoffee pie, malty noted. Taste comprises winter cheer, toffee, cinnamon, caramel, dark fruits, spice. Medium bodied, moderate carbonation, semi drying close. Decent enough winter warmer.
