When we made Rolling Palace, it was supposed to be a one off. But we loved it. So we've made others. Rolling Palace is now our IPA series. Same base beer, different dry hop.

Number 4: Azacca.

A tropical God of hops. Spicy, with mango, pineapple and piney notes.

On tap (keg) at the Black Isle bar, Inverness, Monday 26th September 2022, in the company of Nick and Anna. Pours gold , excellent clarity with a filmy white head. Soft in the mouth, a little bitter bristling across the tongue, citrus with some sweet orange elements in particular shining through, a little bitter juicy fruit ripple, it's very good and the better of the two Palace variants on offer here today.

Can from Westhill Service Station. It pours lightly hazy golden - blonde with a bubbly white head. The aroma is fresh, sappy, green, pine, tangy orange, tangerine, marmalade on white bread, orange gummy bears and nip of spice. The taste is firmly dry, bitter, sappy, resin, pine, green, leafy, tangy orange, grapefruit, tangerine, peppery spice, and wood with a dry finish. Average body and carbonation. Nice sappy centennial. Perhaps a touch more condition needed? Enjoyable anyhow.

On tap at the Hanging Bat. Appearance - golden with a light haze. Thin but attractive lacing. Nose - citrus, light custard cream note. Taste - more of the custard cream and light orange this time. Palate - light bodied, dry balanced finish. Overall - pretty decent.

Can from Cork and Cask. Pours hazy golden with a thin white head. Aromas of tropical fruit, mango, light citrus, light spice. Taste is more of the same. Light sweet finish.
