Amber Lees was made from a single wort produced in June 2020, using the rich first runnings from two mashes. A large quantity of aged hops was added to the boil to balance the sweetness of the wort. Fermentation took place in two freshly emptied, unrinsed barrels from Ross on Wye Cider & Perry Company having been used to make one of their unique single variety ciders. The aroma of the empty barrels was wonderfully heady, with a mix of apple and sweet American oak aromatics. The wort fermented using just the lees remaining in the barrels for 14 months. This relatively short time was chosen to preserve the rich, full body we desired. The resulting beer was primed with dark muscavado sugar and matured in bottle for a full year before release.

Bottle shared at the CBJ BIG BOOSTY XMAS tasting, thanks to Fergus, 13/12/23. Hazed orange to amber topped with an off white cap that thins to the edge. Nose is tangy fruit esters, orchard wood, herb, funk, damp cloth. Taste comprises orchard wood, barnyard bite, funk, stewed fruits, balanced acidic wash. Medium bodied, fine carbonation, semi drying close with a puckering climax. Decent ... not sure why this one bombed so much.

Bottle shared at Craft Beer Junction - cheers to Fergus. Pours likely hazed pink-gold with a small, creamy white head. Light sweet flavour with sturdy acidity, some dry and tart berries, sharp acidity. Light bodied with fine, massaging carbonation. Quenching finish. Not bad.

Bottle shared at craft beer junction bermondsey Bottle share. Many thanks. A hazed amber red coloured pour with a lasting white head. Aroma is semi sweet, nutty. Caramel, vanilla, oily, dried raisin. Light smoke. Flavour is composed of tart lemon juice, salty, bitter, harsh, salt, tcp. Palate is harsh lemon rind acid,. Harsh carbonation.

Craft Beer Junction. Xmas bottleshare. A light haze on this amber beer, decent pale cream colour head. Airy palate, fairly dry, decent fine carbonation. Tart lemon and berries, some acetic burn. Airy dry finish. Buy me a pint! So I can give it back..

Bottle, online from the brewery. Pours light hazed amber with a dissipating white head. Aroma: sour apple, vinegar, some cidery hints. Taste: moderate sour, vinegar, kinda balsamic type vibes that dominates any other character. No idea if this was intended. Pretty odd, anyway. Like our main Mills correspondent before me, i wasn't a fan.

Bottle. Mills online shop. Light haze on a pale amber. Slim halo of white. Nose has rotted apple. Sour malt. Taste is tart and sour. Pretty vinegary this. Tart and sour on the palate. Doesn’t make any sense. Grim.
