Sherry barrel aged limited version of Pime Öö.
Taste: Big and bold, this immediately makes the Pedro Ximenez felt. Luxuriously sweet, with a heavy presence of cherry and chocolate. The raisin character from the aroma comes through again, sliding down the tongue smoothly. Best enjoyed when sipped by a fireplace.
Appearance: Jet black with a brief ruby tinted light brown head.
Nose: The smell of dates, raisins, cranberries, and above all, sherry overwhelm the room. Blackcurrant jam, smooth chocolate, and a light toasted oak character come through later, whilst sweet malts and a hint of alcohol closes the aroma.
Malts: Pale malt, Munich malt, Special B, Crystal 300, Crystal 150, Crystal 200, Carafa type 2 special, Chocolate malt, Chocolate Rye, Oats
Hops: Magnum, Northern Brewer

Thick, sweet, full, didvI mention sweet. Sherry comes through strong, some coffee, a bit of chocolate. Really nice, but might be even bettercwith a tad less sweetness.

Bottle @ Højbjerg tasting. Medium head with short duration. Color is black. Aroma and taste are rich roast malt, alcohol, sherry, fruits, hops and has a nice long bitter finish.

Beaucoup de maîtrise dans cet Imperial Stout vieilli en fût de sherry avec une base à la fois douce et tempétueuse, des arômes pleins et denses, une texture suave à souhait et un vieillissement en fût respectant la base, permettant de l'enrichir et de le dynamiser sans l'écraser. Sa limite est sa sucrosité qui est trop poussée pour mon propre goût. Le visuel est sur un noir total sans mousse. Le nez est franc et plein sur le chocolat, le café m, le chêne et le sherry. Dès l'attaque, le cocktail, tout aussi subtil qu'intense nous charme avec une plénitude assez exceptionnelle en seconde bouche là où l'alcool devient plus vif et puissant pour un Imperial Stout qui devient brillant. Une bière qui se déguste et savoure lentement.

ABV: 13.9%. Clear dark black brown colour with a large, frothy - creamy, good lacing, mostly lasting, light brown head. Aroma is moderate to heavy malty, roasted, chocolate, vinous - port - sherry, dark fruit - dark berries, plum, wood - woody, barrel - sherry. Flavor is moderate to heavy sweet and light bitter with a long duration, molasses, dark malt, sweet malt, roasted - chocolate, sherry, port, barrel, plum, dark fruit, dark berries. Body is medium to full, texture is creamy - syrupy, carbonation is soft, finish feel is warming and light to moderate alcoholic. [20200509]
