We had the privilege of spending time this past March with the Zillicoah team at their Asheville, NC, brewery. Together, we toured Sierra Nevada’s breathtaking facility in Twin Mills, NC, and shared our mutual excitement for the annual release of their iconic Celebration IPA. That inspiring conversation sparked the creation of Wolf, with the first batch brewed at Zillicoah in July. Tragically, Hurricane Helene devastated the region, wiping out all but a couple of kegs of the initial brew. This batch of Wolf is our response to this tragedy, symbolizing our belief in the resilience and resurgence of Zillicoah and all of those in our industry impacted by this disaster.
Wolf pours a rich burnt amber with a creamy off-white head. Its aroma is a nostalgic nod to the classic C-hop varieties that ignited the craft beer revolution, bursting with pine needles and bright citrus zest. The first sip reveals earthy spice and resiny hop character, balanced by a sturdy malt backbone and a touch of sweetness. A lingering yet smooth bitterness and a well-rounded mouthfeel make this lager exceptionally drinkable.
While a lost batch of beer pales in comparison to the greater losses endured by Zillicoah and the Western NC region, we felt compelled to see this project through. We hope Wolf can serve as both a tribute and a means to support recovery efforts. The Western NC community still needs our help, and we encourage you to contribute not only by enjoying Wolf but also by donating to the many incredible organizations working tirelessly in the region.

16 oz can in a trade with Clarkvv. Thank you! Aroma is light Pacific Northwest hops. Soft herb with pine, some toasted caramel malt. Flavor follows with some grapefruit pith bitterness. Well-made, but certainly not my preferred hop profile in any beer.

Brewery draught, 2/8/25.
Clear, lighter amber with some copper and deep beige. Medium-sized, off-white head is creamy.
Fruity and bright with spicy chinook-like notes and plentiful pink grapefruit. Clean and very aromatic without too much of the medium malt. Just a bit of crusty bread/toast.
Rich and malty with pine and grapefruit. Fairly bready with a hint of pith and resin lingering, yet it's easily balanced by the supple base malt. Not overdone on the medium malts and the finish isn't chalky or astringent. Just a well done American amber lager with tasteful and flavorful hopping.

Clear amber with plenty of lacey head. Nose is hoppy. C hops and soap and pine needles. Almost reads SNPA. Bread crust. Flavor has soap and pine and some root veg. Bread. Dry, bitter.

Pours slightly hazed mahogany into a willi. Mocha pancake head with good retention recedes leaving trailing sheets. Sweet meadow, cocoa and pine aromas. Crisp with dark caramel, cocoa and earthy pine front to back. Lasting earthy pith finish. Hints of a Cascadian lager.

Amber pour and small sudsy head. Nose is peppery and citrus and leaf litter. Tastes of grapefruit, pepper, other herbs, tea leaf. Dry palate. Zippy
