Fermentation activated by lactic bacteria and yeast inoculum, including brettanomyces typical of spontaneous fermentation. Maturation in barrique for 12 months, fresh ramassin (“damascene” plums) added in maceration in Summer. Refermentation in bottle or keg.

Tap @ CBC, 14. HAzy brown/amber with no head. Aroma is malt, sour, dark fruits, sour fruits, caramel and vinegar. Flavour is malt, sour, dark fruits, sour fruits, medium sweet, caramel and a little vinegar.

Draught @ CBC 2014. Pours murky brown orange with a small offwhite head. Aroma is light sourness, bretty, fruit, berries, sweet and tart peach. Flavor is sourness, light bretty, rich tart fruity, peach, little spice, wood. Medium body, soft carbonation, light acedic finish. 020514

Sample from tap, CBC 2014. Hazy, amber colour with a reddish hue. Fruity aroma with tart cherries, apples, wood, citrus, yeasts - barnyard and earthy notes. Taste is sour. Medium body with a soft carbonation. Finishes tart with sour apples and ripe fruits. Very pleasant Sour.

Sample at CBC 2014, Blue Session. Poured a hazy medium amber with a thin broken light tan head. The aroma is light zesty citrus yeast. The flavour is light sour with a hint of sweetness and a light smooth acid apple yeast palate. Light bodied with soft carbonation.

Bottle. Pours a cloudy light brown with beige head that lasts. The aroma is formaldehyde, grape skin, and oak. Velvety mouthfeel with strong prune, light plum, oak, funk. Very good.

Tap@Birch. Pours hazy reddish amber, smatan head, decent lacing. Aroma is perfume, plums, fruit. Flavor follows, grape, perfume, bit of barnyard, floral, light tart, light sweet. Light body, low carbonation. Odd.
