Framboise inspired wild ale with tayberries and strawberries
Inspired by the Belgian framboise, our version is primary fermented with a Brettanomyces blend which produces intense juicy stone and tropical fruit flavours. In this, our 2023 iteration of Spectral Lore, we refermented the base beer on 250g/l of Tayberries and an additional 80g/l of strawberries, both harvested around 12 miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee where these berries were first bred.

Fra fat på Lervig Local: uklar gammelrød med ok skum. Bringebær, rips, tyttebær og rabarbra er de nærmeste assosiasjoner, da jeg aldri har hverken sett eller smakt tayberries. Litt vanilje i tillegg. Frisk og lettdrikkelig med mye bærsyre i avslutningen.

[notes] Poured from bottle @ FHF 2023 (Aug 12, 2023). Quite hazy pinkish red with small white head. Strawberry, mild raspberry and tayberry. Decent.

750 ml bottle. Pours a hazy pinkish red with moderate head. Aromas of earthy red berries and wheaty malts. Flavors of soft strawberries, chalky raspberries, a little citrus and more wheaty malts. Interesting. Super balance on the fruit; a little creamy and a little tart.

Bottle pour at Farmhouse Fest 2023, pours an opaque tart pinkish amber with a small off-white head. Aroma brings out jammy tart stone fruits, tart berries, and some bugs. Flavour is tart, with lots of tart red berries, some strawberry, gentle acidity, and some oak. Not too acidic, with a wonderful fruit expression. Excellent.
