Our complex, Belgian-style ‘wild beers’ are aged for several months or even years in our oak barrels. Each barrel contains a different base beer (with distinct color, flavor, body, alcohol, malt and hop character) which undergoes spontaneous and prolonged fermentation with wild critters including Brettanomyces, which is a non-spore forming genus of yeast which lives on the skins of fruit in the wild. The genus name Dekkera is used interchangeably with Brettanomyces and was discovered at the Carlsberg brewery in 1904 by N. Hjelte Claussen, who was investigating it as a cause of spoilage in English ales but which is appreciated and encouraged in certain traditional Belgian-style ales.

Super crisp and clear golden and light peach coloured body with a thin, very fast-dying off-white head, but the bright pink and peach tint shows throughout. Aroma of very crisp and definitive gueuze with a lot of funky yeast, brett, light astringency with a dose of sour cherries and raspberries noticeable. Light to Medium-bodied; Slightly astringent and assertive strawberry and cherry flavours dominate with some yeast and coriander seed and then the malts with a defined grassy and almost dry, effervescent touch with the cherries, gueuze, grain, yeast and a dry oaky, cedar and foeder aged dryness with a little bit of earth noticeable on the finish. Aftertaste is dry, very funky with a light fruity note, but mainly all yeastie and complex based on the strain with some soured and tart brett-like finishes. Overall, a very nice and incredibly complex beer with some light soured and tart strawberry notes throughout, but the sour and tart foeder and yeast-based complexities work out nicely with a dose of grain and dry funk for the entire sample. Great to have and well worth trying to find, especially if you enjoy real gueuzes from Belgium, as this one is a great representation of an American attempt, especially on draught! I sampled this thirty-two ounce pour on draught into a crowler at BeerTopia in Omaha, Nebraska on 28-June-2018 for US$12,00 for thirty-two ounces sampled in Washington on 22-July-2018.

Keg at the bottle shop druid Street. A clear golden orange coloured pour with a sticky white head. Aroma is hot alcohol, solvent nail polish remover, vague strawberry,. Flavour is composed of of woody Bourbon, tangy acidic fruit, balsa wood, semi sweet. Spicy woody finish. Palate is spicy, tangy, moderate carbonation, oily texture.

Tap. Pours clear golden, minimal head and lacing. Aroma is strawberry, oak, red wine, cherries. Flavor is light tart, light musty funk, berries, oak, wine. Light plus body. Nice.
