A portion of this ale was aged in French oak barrels to honor the subject of the third verse. Topped with a Belgian-style dark ale, the finished blend is a bold and spicy concoction that rises above the pecking order to establish its own unique place in the 12 Days of Christmas Series.

Bottle, 75cl. An unclear chestnut colored beer with a small, dense, beige head leaving lacing. The aroma has lots of raisin and prune, with notes of caramel maltyness, alcohol, bread notes, a light roasted malt touch, some notes of molasses and dark berries. A vague hint of oak. It's full-bodied and lightly warming, semi-sweet, with a gentle carbonation. Dark dried fruit, alcohol, bread hints, caramel, some dark berries and chocolate covered raisin in the flavor. Brown sugar and some oak and a very light spiced hint. Lasting warming finish. Sure a fine brew. 241123

Bottle 750ml @ gunnfryd. Pours dark reddish brown with a beige head. Aroma has notes of malt, caramel, dried fruit, alcohol and oak. Taste is medium to heavy sweet and light bitter with a long warm, caramel, oak, dried fruity and caramel finish. Body is full, texture is oily, carbonation is soft.

Notes from January 2011 Half growler from New Beer. Cheaper then the bottle. :D Golden Carolus Goblet. Love the thin lip on this glass. Filled almost to the brim. Sounded intact. Filled about a week ago. Straight down the middle pour. Half inch of bubbly, tan head. Clear, ruby/russet body with plenty of activity. Blanketed lace. Alcohol, macerated dark fruit, caramelized grain, candy. Am I wrong when I say I taste a little smokiness in this? Macerated raisins/prunes(sharp), candi sugar, some odd bay leaf thing? Oxidation is big on the back. This spiciness this beer is advertised to have is lost to me, unless that word is code for I sat on a yeast cake & all I got was this off flavor. Feel is very light, carbonation: fluffy. Alcohol melds & is nondescript. A Strong Dark Ale that comes off easy, but noticeably watered down. Fucking odd beer. Seems so easy at first, but you really have to love the particular combo of flavors to keep going. Touch too pricey.

From tap at Apollon Platebar, Bergen, 31.05.24. Clear mahogany. Not much head or lacing. Decent aroma and taste of figs, sweet dark caramel, dark candy sugar, dates, prunes, bark and some bitterness. A bit too much on the sweet side of things.

This 750 ml bottle of 3 French Hens was the highlight purchase at the Dallas Total Wine some several minutes from Love Field a few weeks back. The label says this is the 2022 Edition, all right by me. I have had a few of the 12 Days of Christmas brews, pleased to be trying this one. In place is my Chimay glass for the pour, I see a dark brown body with red highlights finished by a thin but creamy head of silvery tan foam. I smell ripe dark fruit, yeast and plowed earth. The drink finally, damn, I should have bought two bottles. Dark plums, dark raisins, whole grain bread, malt, maybe a touch of the vine, red cherries and a woody background. This one is dense and full in its feel. The Bruery is a top flight brewery, this brew is another example of that.

Sample at Bob's Bar during the Bruery Almost 12 Beers Of Christmas Night! event on 12/05/2019. Hazy brownish-copper color with a medium off-white head that recedes steadily to an outer ring. Sparse patches of lacing. Aroma of fruit, spice, yeast and malt. Full-bodied with flavors of Belgian yeast, dark fruit, caramel malt and spice. The finish is earthy yeast and raisin. Above average overall.
