The rich bronze colour is derived from the mix of Munich, Maris Otter, Crystal and Black malt. Most of the bittering is from Atlas hops while the wonderfully fruity Galena hops are used at the end of the boil for the aroma. A tiny amount of seasonal spices are used for a hint of Christmas, warm fires and good cheer.

On cask at Cloisters. Appearance - amber with a decent head. Nose - cake and spices. Taste - spiced biscuit and astringent malt. Palate - close to medium bodied with a crunchy texture and a long dry astringent finish. Overall - not up to usual Dark Star standards.

Cask gravity at White Horse Winter Best of British Beer Festival, Chelmsford. Amber colour. Spiced aroma with hints of aniseed, cinnamon and clove. Wasn’t a huge fan I’m afraid.

Cask at The Claret. It pours clear amber with a medium beige head. The nose is winter spice, earth, caramel, orange peel and dried berry. The taste is earth, wood, winter spice, pumpkin, squash, raisin, light caramel and resin with a dry, lightly spiced finish. Medium body and soft carbonation. I really like the balance.

Cask at The Sussex Arms, Twickenham. A golden/amber coloured pour with a medium white head on top. Hoppy, spice, coriander aroma. Tastes slightly hoppy, spice, some ginger and coriander almost perfumed. Interesting, this one seemed to improve as the pint went on.
