Reflection of Time is a strong ale by Sophie de Ronde, Head Brewer. This recipe takes her back to her early days of beer discovery and love of Belgian beers, particularly Rochfort 8. This beer is smooth and complex with flavours of dried fruits and rich maltiness. Perfect to enjoy by a warm fire whiling the winter away.

Keg at The Lyric, Soho. Pours deep chestnut with beige foam. Aroma: plums, stewed fruits, caramel, toffee, minor dried fruits, yeasty hints. Taste: towards moderate sweet & bitter, light rich, caramel, dark & dried fruits, candied peel.
Medium body with soft carbonation. Minir Dubbel vibes, to my taste.

Can. Light haze on this deep amber beer, small bubbly pale tan head. Light crisp palate, impressively light for the style and abv. Light smooth malts, a nice caramel and toffee streak. Good ripe fruits and dried fruits, a touch of candy before the crisp finish. Yeah, defo Belgo Dubs style, lacks the richness of the best of those but sucker punches with a lovely brightness and cleaness. With those attributes, it wanders easily into 'dangerously drinkable' territory.
