Due to the combination of over-fermentation, acidification by fermentation with Brettanomyces and infusion with American oak, a gentle sour, fresh beer with clear notes of wood is obtained.

Bottle. Nose sour, vinegar, oak, barrel, green apple, white grape, lemon, must, sherry. Taste is sharp, vinegar, then almost cheese like alkaline taste to a sweet finish. Sherry, grapes, green apple, cream, vanilla, brie, lots of cherry notes, bourbon, short dry finish. An interesting beer, which is quite different to other Flemmish reds I’ve had. I am very fond of Slaapmutske who are a hugely under-rated brewer, who really need a better label designer and copywriter.

750ml bottle shared with Anndiesel. Unfiltered cherry brown body. Steady, foamy off-white/red tinged head. Medium bodied, very easy drinking. Classical and well done. Good, almost cleaner than Rodenbach, but quite similar. I would drink this sort of beer every day if feasible. Solid, not exactly World Class, but well done.

33cl bottle at KwakInn, Tallinn. Pours dark, glowing amber with an off-white head. Fruity and wooden aroma with notes of balsamic vinegar, raspberries, yeast and malt. Sour, wooden and tasty. Nice and refreshing acididty. Fairly light body, but quite enjoyable.

Draught at Brewer’s Fork, 1/25/16.
Good clarity and quite a light, cherry pulp colored body. Thin, off-white head shows poor retention.
Smells of light oak, surprisingly low acetic character and light cherry-like notes. Dry toffee and light vanilla with some black pepper and a touch of cellar and plastic notes. No alcohol noted.
Cherry and lactic acid in the mouth, with vanilla and a touch of acetic character. Not much going on here, and very borderline flemish sour. No complaints that it’s light and lower on acidity, but there are plastic and vanilla notes that aren’t particularly compelling. Light but ample carbonation, medium amounts of sweetness.

33cl bottle. Bbe 11/2017. Pours deep mahogany color with a thin but lasting off white head. Tart, acidic, vinegary nose, some cherries. Flavor has vinegar, tartness, wood, cherries. Long finish with ripe cherries. Very pleasant taste. Refreshing and balanced.

Bruin bier met weinig schuim. Smaak is zuur en fruitig, bessen en braam. Komt wat waterig over.

Bottle (from Koht, Tallinn). Pours copper with light beige head. The head stays for some time. Aroma is sour, cellar, fruits, some acidic and salty notes. Flavor is sour and slightly salty, fruits, cellar, malt, wineous. Finish is somewhat dry. Body is thin. Overall: ok.

33cl Bottle from Vonk. Hazy brown - red colour, off-white head. Aroma is tart, red fruits, balsamic vinegar, brown sugar, red wine. Flavour is light to medium sweet, light malty, fruity, light funky, wood, tart, tart red fruits, some acetic acid, tart - bitter finish. Light bodied. Nice.

On tap at Avenue Pub. Pours a clear amber ruby with small off white head. The aroma is apple skin and vinegar. Thin mouth, tart apple, oak, light funk, very good.
