We've always had a fascination with Flanders Red style beers & their links to brewing in the UK. We also love them - sour, but with a rounded sweetness; complex, but effortlessly drinkable.
This will be our third blend, this time combining 10 barrels of varying aged beer - from 4 to 14 months. We used a mixture of pale, rye, wheat & chocolate malt to give a more complex profile. In the boil, aged hops were added to give the beer a note of tannins. Finally, the beer was aged in barrels, with our own mixed culture of wild yeast and bacteria. The result is a deep ruby beer with tannins, spice, acidity, sweetness and a hint of oak and spice.

75cl bottle from Hoptimism. Appearance - very deep amber brown with some orange chinks. Lower carbonation compared to keg versions of earlier version. Nose - vineger, funky, vinous and woody. Taste - balsamic vinegar, wood and funk. Palate - medium bodied, sour and tangy. Great persistence though lower carbonation may take a little away from that. Overall - very much in the ilk of Flemish Red.

75cl bottle shared with Ewan and Sophie after a mega ride at Coed Y Brenin. Hazed brown with a fading reddish hue, off white head. Aroma not too vibrant, very distant wild sweetness, dark malt. Taste presents a rather subdued flanders red character, with a mellow sweetness taking a backseat to the various malts, alongside a distant chocolate undercurrent. Not quite as vibrant, complex and sour as the style can get, but it's a nice gentle sipper.

75cl bottle @ Tilquin admin gathering.
BB 02/2025.
Acajou, col fin beige retombant rapidement.
