750mL bottle, pours a deep dark reddish brown with a small beige head. Aroma brings tart dark fruits, a touch of vinegar, and a little wood. Flavour brings out lots of wood, dry dark fruits, and a touch of vinegar. Dry, complex and well-balanced. Wild yeasts finish this off. Excellent.

Bottle thanks to Andy. Opens with a pop. It pours cloudy deep red-brown with a thick yellowish tan head. The nose is funky, damp wood, barnyard, must, lactic vibe, earthy roast, sour cherry and cocoa. The taste is bitter, tart, damp wood, funk, green apple, lemon peel, sour cherry, cherry, earth, some acidity, sherbet and barnyard with an earthy finish. Medium body and moderate, foamy carbonation. Good depth and balance. Rather nice.

Crazy carbonation as the cage breaks off as twisting it, corks pops out and beer splashes all over my oven. Once calm down, pours a beautiful hazy caramel-amber colour with mohagony hues. Big foamy beige head that stands tall for a while leaving some good thick foamy lace. Sour aromas with notes of balsamic vinegar, apples, plastic and hints of cherries. Earthy mouthfeel with some wood and tart from grapes. Apples in the taste with a sour finish and mild bitterness in the aftertaste. Pretty nice for the style. Just watch our when opening the bottle.

75CL shared by Tommy. February 2015 bottling. Split 3 ways in Hill Farmstead stemware at room temp. It gushed slightly but not in any major way. Looks like an oud bruin. Dark reddish brown 1 finger head, purple edges. Nose is interesting. Some tart sour cherry, oak and a little bit of turpentine. Taste is not bad, tobacco up front. Not very tart or sour, almost no fruit at all in the taste. I do get some charred oak tannins, burnt flavors, some sort of tree bark, some brown sugar. I was expecting much more tart tastes in this. and it has an underlying off flavor I can’ get past.

Bouteille 750ml. Couleur brune foncée presque opaque, faible mousse beige évanescente. Arôme de cerise, vinaigre balsamique, chêne, touche d’alcool. Goût de pomme-grenade, chêne, vineux, acidité moyenne. Carbonatation moyenne, corps moyen-dense.
