From bottle at Quintessence. Hazy golden with a white head. Aroma of deep cellar funk, cobwebs, citrus, hay, woody notes, light barnyard and vinous notes. Flavour is light moderate sweet and moderate sour. Medium bodied with light carbonation.

Bottle sampled at Quintessence. Hazy dark golden with off white head. Nice funk, hay, cognac, sugared orange rind, light grainy, white wine, apricot. Great balance with the Armagnac! Medium sour, light sweet and bitter. Medium bodied with soft sparkly carbonation. Great!

Quintessance 2018. Sampled during tour. Hazy golden with white head. Sweet and sour grain, honey, grapemost, nutmeg. Moderate sweet and bitter, bit more sour. Mild and softening woody tones. Medium body and soft carbonation. Very nice.

Bottle at Quintessence. Hazy golden with a lasting white head. Fruity and vineous aroma with funk and old wood. Dry and tart funky and fruity flavour with a lot of oak, nuts and cognac.

Bottle, at the brewery and unintentionally at Moeder Original. Unclear golden color with white head. Aroma is cheese funk, juicy, pineapple, very deep. Taste is pineapple, cheese, hay, milky, a bit sweet, almonds. Silky mouthfeel with medium carbonation. This will probably be mind-blowing with age, right now it's too sweet/milky. The Moeder bottle was more cellary and woody,more cobwebs, and somehow more tasty. 9-4-8-4-17At Quintessence 2018 - the food pairing improved this beer - it's very lecker.

Bottle @ Cantillon. Hazy amber colour, white foam. Subtle carbonation. Very complex nose, lemon, barnyard, wood, armagnac. Taste is tart, light sweet, very funky. Wow, even better than te previous versions.

Thanks! Sampled two different 750 ml. bottles @ the brewery; Orange golden, white bubbles, uneven, largely on the side. Nose is super dirty Cantillon lambiek, bit dirty in a good way, grainy, cow fodder, lambiek feels rather old in a great way, cellar, cobwebs & what I take to be Armagnac on top, funk,… Intense in a great way. Taste is candied lemon, sweetish gunk, grainy ancient lambiek, cellar, oak, orange peel, almost marmalade hint, grainy, nicely dirty, oak, almost leather, what I take to be Armagnac… Lively carbonation & grainy. Intense, tasty stuff. Second bottle was a bit rounder, slicker, less raw, still highly tasting, ancient lambiek feel. Very tasty as usual I am in a minority here liking the Cognac version a bit more but that is pointless, irrelevant nit-picking between oranges & apples I suppose, highly tasty stuff, lovely as expected.
