Straight from outer space, WADESDA 7: a traditional saison, light (5.5%) and very refreshing, sublimed with Brasserie Cantillon lambic. This mixed fermentation brew develops flavours of cereals, floral and herbal accents of noble hops and, thanks to the lambic, an elegant acidity.

Keg at the Beavertown Extravaganza, day two, 09/09/2017. A pale yellow straw coloured pour with a fine white head. Aroma is light dung, funky apple, light grains. Flavour is composed of grainy, hay, apple, some lemon, floral notes, . Little soapy in the finish. Palate is grainy and crisp, moderate carbonation. Decent.

Pale, brassy-gold, good clarity and a smattering of rocky, white head that shows moderate retention.
Piquant acidity in the nose is softened by biscuity malts and cereal grains, while lush herbs can be gleaned from the fairly sizeable hopping rate. Snappy and bright, for the most part, it gets weighed down a bit on the end as the lactic acidity grows stronger, with more lemon, lime and pepper lingering. No alcohol or flaw.
In the mouth it's very dry, with a soft-to-grainy texture showing off various adjunct grains and matching the pepper and herbs nicely. I'd probably be more on board with it having none of the lambic in it, as I feel that most of these saison-lambic blends, (see Bokkeryder) while fine, really just get in the way of the saison expression and the delicate flavors therein. But whatever, for those who like their mixed culture saisons, it's completely passable and quite tart, grainy, dry and crisp on the end. Very refreshing and not "sour", thankfully, all told.

Draught Huge, very dense and fine snowwhite head over faintly hazy yellow beer, lace. Floormop variety Brett (Cantillon????), chamomille, yeast. Warming up, more usual lambic aromas. Mild lambic flavour, again a hint of chamomille, sunflower seeds, other multigrain seeds. Sharp MF, dry acidity, even some dry-out effect; good carbonation, certainly for a beer containing lambic. Surprising - indeed, wadesda? 6/4/8/4/15

Pours fizzy blonde, small white head. Smell is mostly tart, and funk by the lambic. Taste shows some phenolic features typical of a saison, combined with a stronger-flavored funk and tartness of the lambic. The tastes don't really work together to me, as the combo gives an almost buttery MF ( even though I don't think this is actual diacetyl ). Certainly not a bad beer, but one of the lesser ones of de la senne.

On tap at Wayfinder, pours a cloudy yellow with a small white head. Aroma brings out saison yeast, floral notes, and light farmhouse notes. Flavour is lightly tart, with citrus, farmhouse notes and floral soapy notes. Floral and citrusy on the finish. Solid stuff.

06/12/2017 - draught glass @Moeder Lambic Fontainas. Hazy, murky straw yellow, creamy white head. Nose is thin cereal, grapefruit. Taste is cereal, grapefruit, some spicy yeast, little bit of brett.

(On tap @ VilleValla Pub, Linköping, Dec 12/17) Slightly hazy yellow pour with a big white head and lace. Aroma is tart, wild, lambic component obvious. Overripe fruit, tart green apple, citrus, earthy barnyard, manure, lactic and a touch acetic, with an underlying quality of cereals and some yeast. Flavour is more heavily dominated by the saison, dry and a bit bitter with cereal grains, dusty yeast, minerals, straw, grassy hops, light earthy funk, some softly fruity citrus quality and some pith. Finish is bone dry. Fairly light bodied, verging on watery, fairly low carbonation. I would have liked more of the lambic on the tongue, it was all over the nose but then retreated away leaving mostly De La Senne character instead.

Guest tap at Moeder Lambic Fontainas. Pours hazy yellow with a fluffy and persistent foam top. Hazy but not IPA, far from that. Super funky nose, getting Brett, horse saddle and barnyard funk. Light fruity feel to it also. Taste has some good saison spices diluted with lambic funk. Dang good this is. Apple peel bitterness, hops, spices, funk - everything combined into a supremely drinkable funky brew. Happy I found this, loving it.
