HOUTGERIJPT WILD DONKER BIER MET BOMEN
Een eeuwigheid in het bos, staand op de plek waar je geboren werd. Ondergrondse vingers raken elkaar, delen voedsel, liefde, kennis. Niemand ziet het, niemand weet hoeveel leven er is. Boven de grond buigen je takken zich als lange armen over een mens. Hij schuilt bij je, je geeft hem eten. Hij neemt wat je kunt missen, vormt het om tot iets nieuws. Takjes knappen onder zijn voeten, samen spreek je de taal van het hout.

Bast is een bossig, mossig, houtig bier met berkenbast, toppen van spar en grove den en sleedoorntakken met bloesem. Donker, zacht zuur, een beetje droppig, veel natuur. De lange houtrijping van 11 maanden geeft warme, rijke smaken en een mooie gelaagdheid aan het bier. De aardse nasmaak blijft lang hangen. Bast is een collab met onze vriend Roald Sooijs.
WILD DARK ALE
Mixed fermented ale with botanics. Brewed with De Mouterij.

Ingredients:
water, barley and rye malt, hops, birch bark, pine shoots, blackthorn blossom, yeast.

Batch #1/#15053 (5.7% ABV) gebotteld op 20-01-2017.
Batch #2 (5.7% ABV) gebotteld op 27-08-2019.

Batch #5 at Arendsnest, Amsterdam, 24th April 25. Pours a very chestnut brown, aroma is balsamic vinegar, tart fruits, cocoa. Taste is tart, dry, balsamic, some sweetness, vinous. Lovely stuff

Bottle at home, batch #3, cellared for a year or so. Pours deep opaque amber with an off-white head. Nose is dark grapes, juniper berries, some pine, loads of funk, a vague hint of acetic acid. Taste is very mild, some acidity and funk show, the finish is practically non-existent, the acidity is completely gone somehow, it closes super flat. Surprising how little character it has in taste and the finish, especially after the relatively high complexity of the aroma.

Bottle. Bit hazy dark brown with lively head. Spruce, earthy, blackberries, light sour, a hint of smoke, creamy, almost thick. Again lovely stuff...

Bottle @MBCC 2024, Yellow Session. Cloudy brown amber, offwhite head. Woody, funky aroma, vinous notes. Sourish flavour, woody, slightly vinous, malty.

Mikkeller Beer Celebration, Yellow Session. A reddish brown beer with a beige head. Aroma of red berries, grapes, some wood. Taste of tart red berries, grapes, brett.
