HOUTGERIJPT WILD DONKER BIER MET BOMEN
Een eeuwigheid in het bos, staand op de plek waar je geboren werd. Ondergrondse vingers raken elkaar, delen voedsel, liefde, kennis. Niemand ziet het, niemand weet hoeveel leven er is. Boven de grond buigen je takken zich als lange armen over een mens. Hij schuilt bij je, je geeft hem eten. Hij neemt wat je kunt missen, vormt het om tot iets nieuws. Takjes knappen onder zijn voeten, samen spreek je de taal van het hout.

Bast is een bossig, mossig, houtig bier met berkenbast, toppen van spar en grove den en sleedoorntakken met bloesem. Donker, zacht zuur, een beetje droppig, veel natuur. De lange houtrijping van 11 maanden geeft warme, rijke smaken en een mooie gelaagdheid aan het bier. De aardse nasmaak blijft lang hangen. Bast is een collab met onze vriend Roald Sooijs.
WILD DARK ALE
Mixed fermented ale with botanics. Brewed with De Mouterij.

Ingredients:
water, barley and rye malt, hops, birch bark, pine shoots, blackthorn blossom, yeast.

Batch #2 (5.7% ABV) gebotteld op 27-08-2019.

Bottle at home. Bit hazy dark brown, lasting g dark beige head. Has that brown sour nose going on here. Indeed some wood and 'botanicals', flowers, berries and dried fruit. Light sour, sweet and bitter. Medium bodied. Good, but I prefer the lighter colored Nevel beers.

Bottle, batch #2 bottled 27 aug 2019. Color: Murky brown, thin off-white head. Aroma: Vinuous, funk. Taste: Over moderate sour, moderate sweet and light bitterness. Floral, wood, tannins, hints of caramel, prunes and pine tree, lemon. Leathery funk. Pretty short and bit watery finish. Below medium body, under averge carbonation. Bit vinuous. Dry-ish mouthfeel. Typical Nevel. Nice.

Sample at tasting session Nevel @de Bierkoning (8/2/20) thanks Mathias. Hazy amber brown, small beige head. Vinous aroma, toasted malt, caramel, birch, pine, light prune, barrel oak. Taste mild sweet and sour, malty, caramel, light lemon, wood, earthy notes, herbs. Medium body, watery texture, soft carbonation, mild sweet and sour aftertaste, wood, earthy notes, very good.

Bottle @ mig & Ølsnedkeren. Pours hazy brown with a small brown head. Aroma of malt, light sourness, little caramel, wet wood, oak, little tart fruit, green grapes, white wine. Flavor is light sweet, light sour, malt, yeast, wood, oak, tart fruit, lemon. Medium body, soft to average carbonation, sweet and light acidic finish. 0102209

Dark brown beer, aroma is wood, tart, fruit? Taste is the same, tart/ light sour, dry aftertaste. Nice.

Draught No head; opaque deep red beer. Very vinous nose, red wine barrels, hint at incense, bit walnut, lactic acid, red grapes. Again outspoken vinous, slight (fruity-vinous - malonic?) acidity; again hints at incense, pine. All excellent, unfortunately, all flavours fade away just a tad too quickly. Dry, nearly dry-out effect; low carbonation, light to medium bodied. Nice, but once more, it promises more than it delivers.

Sampled at Wild Festival Groningen. Hazy brown with dark beige head. Soft spruce, roasted malts, ash, earthy, dead leaves. Light sweet and sour, under medium bitter. Light bodied with a bit watery feel.

Wild festival. Murky brown with offwhite head. Sour grainy malts, brown bread, white wine, wood, lots of it. I love how you guys can put the flavor of an entire forest in a beer. This makes me want to go outdoors. Clay on my boots, twigs, leaves, wet forest floor. Lovely. Not very outspoken compared to the compettion here at Wild festival but god damn if this doesn’t have some serious character thats lacking in some of the delicious sour peach ales I tasted today. Hats off.

Tap @ Carnivale Brettanomyces 2017. Dark amber color. Caramel, apple, vinous. Some woody notes. Apple syrup in the aroma. A soft sourness. Not bad at all.
