This continent-spanning collaboration was aged in WhistlePig Estate Rye whiskey barrels with added single-origin French oaks for twelve months, and finished Sur Lie for an additional six in freshly dumped French oak red wine barrels from Herman Story Wines. A vortex of vinous, lumber-derived cherry, vanilla, smoke, and disturbed earth emanate from a swirled glass in this, our most wood-focused beer to-date. Can at CBJ Tasting. Dark and glossy. Thin dsrk beige head. Aroma has booze and stewed fruit over dsrk malts. Flavourwise it has some bite and a sour edge over rich sweet body. Medium bodied. Oily. Soft carbonation. Long dry somewhat astringent finish. Nice.

Bottleshare at CBJ. Thanks to Cloin for the can. Near clear dark brown beer, small and short lived tan head. Thin bodied dark malts. A little dark chocolate. Some caramel and toffee. Mild oak induced vanilla. Good bourbon soaked ripe fruits. Soft finish. Slightly impy but tasty bw.

Canned 1/10/25, the only batch thus far, drunk 12/31/25, as pictured.
Oh boy...this could be a banger...!! Smell is a near-perfect balance of rich, not too sweet malt and big barrel but not so much as too be austere or over-barreled feeling. Vintage mahogany, vanilla, spicy rye and succulent caramel and English toffee for days...no alcohol noted. Not too fruity, not too tannic. Not too much raisin/prune/plum.
Richly-malted with cherry, vanilla, date and plum, but not aggressively fruity or anything, nor is it too sweet. Really nice balance, thick and malty but not syrupy. Definitely hear them on the "most wood-focused beer to-date". But it's not too much; it's wonderful and rich and not too intense or overbearingly dry, spicy, tannic or boozey. Weird that this beer seemingly flew under the radar. It was available quite a few times on Tavour, and didn't sell out the 2nd+ times. It's an absolute stunningly-balanced gem with a near-perfect amount of barrel expression. And even more impressive, it's in perfect drinking shape after not even a year in can (with plenty more years to gracefully go, it seems). At 14%, you definitely start to feel the alcohol build on the palate, on the finish, but there's zero sharp/heat/alcohol flavor at any point.

Can shared at BMT during Celly Drippins night. This is serious gear. Rich semi-dark mats, stewed fruits, toffee, bourbon, hearty fruit character, moderate booze, a nip of brown sugar, rum, wood, earth. Dangerously drinkable. Super smooth. Absolutely outstanding.

Right. A lot more intense than Now. Sweetish, oaky, caramely and heavy with toffee, barrel, syrup, vanilla, figs, prunes and vinous notes. Complex slow sipper. Nice.

I love the smell of barrel in the morning. LCI. Lots from all the barrel here, big boozy bournbon, red fruit and dried fruit, plus a touch of acidity from the red wine barrel. The horror… the horror.
