Bottle pour. Quintessence 25. Served with some beef fillet. No looker this one. Hazed dull gold with a few loose lifeless suds. Peaty and lightly acidic and not really for me. Great tick though.

Pours clear blonde, no real head. Scent is peated, very mineral, cantillon funk. Actually quite balanced. Taste is sharp, tart, balanced peat. Tastes more like a peated whisky, obviously not as boozy though, but what i mean is that the peat is actually balanced, enhancing trather than overpowering and slapping the face. It works, which is next to a miracle to me, hating peated beers passionately. Medium body, lower carbo. I not only tolerate it, I like it ! I asked for a smaller sample, which I regretted. Oh well, at least very happy to have tried it.

750mL bottle at Cantillon for Quintessence 2025, pours a clear golden with a small white head. Aroma has plenty of peated whiskey barrels, gentle leather, and light earthy funk. Flavour has plenty of peated whiskey, gentle funk, and a touch of citric acidity. The peat whiskey comes across a little like old cigarette butt, but, combined with the funk, it works okay.

Bottle pour at Quintessence 2025. Pours gold with a slight haze and minimal head. Great peaty smoke and some old barrels on the nose. Flavour has trace amount of funk, a pleasant peated whiskey character, gentle acidity. Not the best Cantillon, but as far as whiskey barrel lambics go, this is one works well for me.

Sour, tart, peaty, meaty, fruity, sweet. Rich and smooth, nearly flat, goes spectacularily well with the meat sample.

Süffiger, weich säuerlicher Beginn. Mild, die Säure weicht schnell einer milden Süße, leicht herb, holzig, immer mal wieder kommt der Whiskey deutlich hervor. Spritzig, vollmundig, gut. 10/10/9/11//10

Bottle sampled at Quintessence. Slight hazy golden. Sweet and sour malts, solid peated whisky notes, vanilla, oak,apricot, light funky. Medium sweet, less sour and bitter. Over medium bodied, very soft carbonation. Very nice.

Bouteille 75cl lors de la Cantillon Quintessence 2025. Que faire quand l’as du coupage de gueuze rencontre le coupeur de whisky ? Michel Couvreur est un embouteilleur indépendant de whisky écossais dont les caves de vieillissement se trouvent en Bourgogne dans la région de Beaune. Du coup, il était naturel que ces deux proposent un lambic tourbé.
Pâle, léger blanc.
Arôme est finement tourbé. Ce dernier perce discrètement en rétro-nasal mais le tout reste plutôt caché au nez avec qcq éléments fruités qui percent en rétro-nasal ainsi que la base plus classique du lambic.
Palais reste plaisant avec une bonne approche du lambic et une certaine douceur latente, peut-être liée à la barrique ? le tourbé est plus prononcé qu’au nez, mais reste tout de même trop en retrait (à mon goût). Pointe rappelant une touche cendrée – tourbée, sécheresse fine en bouche, fruits à noyaux – oscillant sur l’amande confite. Tout cela se balance assez bien avec le côté plus acidulé du lambic.
In fine, assez agréable même si, selon moi, cela a été servi trop froid pour permettre au caractère tourbé de vraiment se distinguer. Avec le nombre de station lors de ce festival, il est impossible de se poser 30 minutes pour attendre que la bière arrive à t° ambiante.
