Assemblage de saison et de grisette affinée sous bois pendant 24 mois avec houblonnage à cru de Motueka

L'Hymne au Printemps est un assemblage de saison et de grisette affiné sous bois pour une moyenne 2 ans. Après ce long séjour, nous ajouté du Motueka pour un léger houblonnage à cru et ainsi apporter encore davantage de nuances à cet assemblage.
Les arômes de L'Hymne au Printemps évoque le citron, la pêche et la lime avec une touche de vin blanc. En bouche, vous y trouverez des notes d'agrumes, une touche de lime keffir avec une bonne acidité rafraîchissante et des bulles fines issues d'une refermentation naturelle en bouteille et d'une garde de plusieurs. Cette bière pourra se bonifier pendant quelques mois en bouteille.

Bottle: Poured a clear golden color ale with a large pure white foamy head with OK retention and some lacing. Aroma of funky ester with some vinous notes and light tropical hoppy notes. Taste is also a mix of funky ester with some dry vinous notes, some oak and light tropical hoppy notes. Body is average for style with good carbonation. Well balanced saison with really good drinkability.

A light golden colour with a frothy-creamy white cap, average stay and some decent foamy lacing patches. Getting lightly hazy at each pour, and the carbonation is lively with tiny bubbles. Some good funky aromas with vinegar notes, some sourness, hints of earthiness, hops. The taste continues this with the sour touch taking over the vinegary notes. A tad lemony and a little herbal. Not as sticky in the mouthfeel, more wet with a stingy feel - somewhat woody. Not super dry in the finish. Kind of an easy-drinking, Sour Saison with just a touch of hoppiness from the Motueka.

On tap at the Hautes-Plaines taproom. Pours hazy blonde with a white head. Tons of rustic saison yeast and a punch of acidity on the nose. Flavour is moderately acidic with lots of spicy saison yeast, citrus zest, white wine, and a graint earthiness underneath. Very nice.

A lightly hazed golden saison with a thin white head. In aroma, sweet fruity mix of tart berries, ground cherry, light lactic notes, Brett, very nice. In mouth, a nice tart mix of ground cherry, tart berries, lactic acid, light cork, light buttery notes, very nice. On tap at Hautes Plaines location.
